candy making

I am going to be making white & pink chocolate cameos to put on each piece of wedding cake. I'd really like to make them in advance. Does anyone have any experience in candy making and know how long I can store them before they get bloom? I have 3 weeks to go here. TIA!

    I was in the baking & pastry program in culinary school for a little bit :-)

    I wouldn't make them more than a few days in advance unless you're able to keep them in an air conditioned place and keep it at a constant temperature. Don't freeze them.

    It also depends on the kind of chocolate you use.  I've had the best luck with Peter's Coating Chocolate.  Since I have to order in bulk for my own purposes, I get mine through www.shopbakersnook.com. They've also got a really good selection of molds, if you're still looking.  Their shipping is pretty fast, too.  I like the Peter's brand because of the texture, although white chocolate is quite a bit harder to work with in general.  You'd probably be fine starting them next week as long as you can store them covered in your fridge.  Like SSaltz said, never freeze chocolate.  It's the easiest way for it to go gummy and nasty.

    Too bad Maid of Scandanavia / Sweet Celebrations went out of business.  They were my go-to for everything candy making.

    Thanks girls!!! I will try to do it a few days before the wedding, then. I definitely don't want them to get that grody bloom crap all over. Now to convince my mother... she has taken this project over =)
