having a Buffet?

So I am having a buffet my reception.  How much time should I estimate that it will take for all of the guest to get their food?  I am invited 180 but I am estimating it will be more like 140-150(?).  How long did it take for you or if you where at a wedding with a buffet how long did it take for you to get your food?

I've heard that the buffet at the PEC takes a really long time which makes me extremely hesitant about doing a buffet there. Unfortunately, however, I'm having a very hard time giving up on the buffet idea because I like the idea of everyone having several different choices to pick from.
