Vegan or Vegetarian brides out there?

If you are: I'm just curious what you are serving for your dinner. We are having an all veg menu for the wedding and our venu's executive chef gave us quite a few options. Trying to decide between them, we need to pick 4 for our tasting. Ideas welcome :)

I'm in the same boat.  I'm vegan and definitely want AT LEAST a vegetarian dinner.  Don't want something generic but don't want to scare anyone either.  I googled vegan wedding food and found a list with some good ideas, and the second newest Columbus Bride had some good ideas for food that included vegetarian options.

I'm veg, husband isn't. We decided to do stations, so it wasn't so meat-centric. We had a pasta station (all veg sauces, meatball side option), salad station and asian station (noodles w/tofu, chicken skewers were token meat option on that one, sushi (some veg), etc.
Curious what they proposed for you.
I had trouble with the asian dish at my tasting which I told them at least 5 times that it couldn't have fish sauce in- well, of course it came out and I could smell the fish. They fixed it, but didn't matter- tasted inauthentic anyway. We opted for noodles/tofu and not a phad thai option. They shouldn't have pretended it was phad thai to begin with, fish sauce or not.
Not a single guest commented on the lack of meaty or meatless options since we had a good variety. We had plenty of vegan options or dairy free options too. The only thing we lacked was gluten-free. But you can't cover EVERYONE with so many dietary restrictions.
Our venue was BOMA (now the Bluestone) by the way. And I ate about 3 bites of food the entire day. You will too :)

Our veggie option actually sounds delicious.  It's a cheese sacchetti (cheese, pasta, zucchini, with a sun-dried tomato and basil pesto).  Our venue also had a herb seared tofu and grilled vegetable and mediterranean couscous (which also sounds good).

What are some of your options? I just recently started eating veggies, so not sure I'd be the best person to ask, but I'm quite interested (and would love to google for healthy recipes)!
