We went to Sandals for our HM in July.  It was more expensive than that but worth it!!!!.  Look around but be sure to read reviews and check with people you know before you book.

We went to a Sandals in St. Lucia for our honeymoon and loved it!! (Sandals Halcyon)  My 2 tips for you to get within your budget are:

    1. Consider the airfare for the island you choose.  Our resort package was less than 2k, but the airfare killed us!  Also, it can be tricky to find flights without a bazillion layovers trying to get from STL to the Caribbean.  We found the most direct route was to go through Atlanta.  We were pretty set on going to St. Lucia, but I'm not sure if the airfare was more expensive than other islands.
    2.  If you end up going with a place like Sandals that has multiple resorts on one island, stay at the least expensive resort.  Many places like Sandals have privledges at the other resorts, so you can catch a shuttle to the other resorts and use all of their amenities (beach, restaurants, etc) but pay less for your package.  For instance, we stayed at the oldest resort on St. Lucia, which was still nice, but the room decor and stuff were a little outdated.  But it was quite a bit cheaper than the other 2 resorts, and we could just catch a shuttle and go eat at their restaurants/use their beaches.

We had a great time in Riveria Maya Mexcio. We spent less then your budget and had a great time. I recommend an adult only resort. I also used trip adivsor and booked through a travel agent because I never traveled out of the country and was quite nervous to do so. We had a great time and would highly recommend going there.
