I'm so in awe of the gals that have blogs and plan out meals for the week. That is so not me! If I'm in charge of dinner, you can bet you'll see pasta on your plate. Like the other night, it was that frozen ravioli you can get just in a pesto sauce. Works for me!

I am in the same vote!  We hardly have any food in the house and what I do buy, it gets used up in no time.  I did start looking in my cookbooks today.  So I went to the store and bought a few things.  Right now I have a roast in the oven.  I sawa a great recipe for "Oven Baked Chicken".  Found it inside the butter box. What's your email and I'll send it to you. Google recipes for the type of meat you want.  They have some really good ones out there.

I seriously get so bored with chicken but tonight I'm making rosemary-lemon marinated chicken and roasted garlic potatoes. Sounds good but chicken is a snooze fest IMO.Lately I've been eating veggie "pizza". It's more of an appetizer but I love it. It's just a single cookie sheet sized cresent roll cooked, then cooled and then topped with cream cheese (I add a bit of that powdered ranch to the cheese), red bell pepper and brocolli (both raw). YUM!

quesadillas are easy: tortilla sandwich with cheese and chicken in the middle cooked in a saute pan. Serve with lettuce, salsa and sour cream. It's one of my standbys.
  • edited December 2011
Ohh, chicken quesadillas are super easy. Just cook your chicken, throw it in a food processor for a second and layer it with cheese between two tortilla shells and cook in a pan, flip and serve! Love those things.I'm hungry now!

my #1 tip: go to the library and check out some cookbooks especially some vegetarian cookbooks- i get TONS of ideas from them, and if i want to add meat, it's usually pretty easy. anytime a recipe calls for pork/beef i try to find a way to replace it with turkey or chicken. beef is too expensive, and i cant cook pork for the life of me!(i ruin it every time...any cut, any style) myhappymeals.blogspot.com is an old knottie's foodblog, i dont know if sunkissed listed it or not, but she's great. i've made a few things off of her blog and i loved them.

Chicken quesadilla are a big staple in our house. They're so easy to make, and we..well I never really get sick of them. A lot of the stuff I cook is what I grew up with but modified (not big on beef). One of my favorites is my Mom's Hamburgers with Cream of Mushroom soup. Instead of hamburger, I cook ground turkey on our mini George Foreman grill, then put it in a sauce pan with light cream of mushroom soup (to heat the soup up) and cook up some egg noodles..One of my favorite comfort foods.

I don't have a food blog but I have binders and books of recipes like you have no idea!  How about chicken?  I made a tortellini and spinach soup with chicken broth, stewed tomatoes, garlic, spinach and cheese tortellini.  My mom gave me the recipe.  With the extra spinach I made another batch of the broth but left the garlic out and used orzo instead of tortellini.  All I do is boil the spinach and pasta, drain it, add the rest of the ingredients, simmer about 20 min and that's it!

My latest kick is to make something in bulk on Sunday and eat it as leftovers on Monday's and Tuesday's.  Tonight is Beef Stew leftovers but I know you don't eat beef.  The last two weeks were Turkey Chili and then Turkey Sloppy Joes.  You can use basic recipes and substitute the beef for ground turkey.  I actually love to cook and my mother taught me all the great recipes of my childhood before she passed.  I like to put my own touch on them though :)

yum - I love turkey chilli!! I love it! I make cornbread with my chilli and it is awesome...spicey chilli and sweet jiffy cornbread..ohh, looks like that shall be dinner tonight!

Hey Jodyk23, would you email those recipes too? cmk_uno at yahoo dot comI have a feeling no-bake pumpkin cheese cake is not on my wedding dress diet, but they do sound delicious...One of my favorite go-to recipes is home made pizza.  You can put whatever you want on it!  To try and make it healthy, I buy the whole wheat, pre-cooked pizza crusts.  There are some meijer brand ones that are cheap.  I also use spaghetti sauce 'cause it's cheaper than pizza sauce and tastes the same.  Add cheese and toppings, bake it for like 10 min until the cheese melts, and you've got dinner!

I like white pizza. Store bought crust, basil pesto, shredded mozzarella, cubes of pre-cooked chicken, and pine nuts. cook at 375 for about 7 mins or until cheese starts to melt. It easy, quick and really yummy!

I can't believe I never thought of putting chicken in the food processor to chop it for quesadillas!!  That would be so much better than the strips/chunks that I cut it into.  Sooo excited to make quesadillas sometime this week now, thanks!!

Brian does all the cooking (hehe), but a few of our favorites are:* Taco Bake (w/ ground turkey) - layer tortillas, refried beans, taco meat, tomatoes, and cheese (and whatever else you want to include) in a casserole dish...bake...and you're done!* Chicken Enchiladas - boil chicken (Bri uses a pressure cooker), shred it, and mix with enchilada sauce, cheese, and a little sour cream...separate mixture into tortillas...wrap tortillas and place them in a 13x9 pan width-wise...pour remaining enchilada sauce over top and sprinkle some cheese on top...bake...enjoy the yumminess* Oven-fry chicken w/ some sort of veggie* BBQ shredded chicken sandwiches - boil chicken (again Bri uses the pressure cooker), shred, and mix with BBQ sauce
