Set our date! Green, eco-friendly caterer?

Hi guys,
  So we've set our date!  We have booked with Goldner Walsh in Pontiac.  They are a nursery and garden center that has an awesome greenhouse to hold a reception in.  We saw photos from other weddings, but what will be even cooler is that they are building a new ampithetatre for ceremonies, which will be completed well before our date.  I'm super excited!  I loved the idea of Planterra, but we couldn't afford it.  
Something else I'm really excited about is that the owner is super into recycling and using Michigan products.  So here's where I'm asking for help....

After searching google, I have only been able to find a couple caterers who feature a green menu, but I'm looking for a full service caterer who does 100% eco catering.  As in, plates, linens, etc.  Has anybody used or run across one?

I am NO help - however, I had to get out of this post and come back to it to see if there was an error. Originally it said you had over 7000 posts and I was shocked. I was going to ask (in a non biitchy way) that if you were so eco-friendly, how did you manage so many posts in less than 2 months, haha. Thankfully it now says less than 30, which is reassuring.

Does the owner of the nursery have suggestions? Since they have held events there before... I think the Inn Season Cafe in Royal Oak caters. They are environmentally conscious and vegan/vegetarian. I'm not sure how good they are at catering, but I always have yummy meals at the restaurant.

I just came across a company in Ann Arbor called Food For All Seasons.  Looks like they may offer all the services you are looking for.  Good luck!
