Earlier this year I got into it with my two BFF and I finally stated that things needed to cool off so it would be best not to talk about my FI/wedding until after the first of the year.

I have just been keeping them updated on general stuff and yesterday one of them said if I wasn't going to TN this weekend, perhaps the three of us could get together for breakfast.

First off, there is a family emergency with my mom's two sisters. With the one sister, it has been touchy and thought she wouldnt make it thru the weekend.  The other had to have stents put it.

BTW, Dad would be taking her, however, if they go, come back and something happens, Mom may or may not be able to go back.  She is not in the best of health either.

I told them that I wouldn't know if I could or not until Saturday, but I do have my reservations.

Should I say yes and go, and stick to my original statement of no talk until after the first of the year?  Should I decline?

I don't think you should decline just because you initially said you wanted to take a break until early next year. I think that's an arbitrary date and shouldn't really matter. If your friends feel ready to start back up a relationship, and you feel the same, then you should.

However, you should only accept or decline based on your other schedule. If you truly can't make this weekend work due to family obligations, you should tell your friends that and say "are you free next week/weekend/whatever?" Tell them you can't make it, but be clear that you're not just shutting them out and that you do want to get together with them...and soon.

I think what bothered me at the time was when I called a "timeout", one of my friends said she felt like she was beingspanked.  Actually, she had said "I'm outta here!" before that. I just wanted to take a break....
