Hey Ladies- figured I would put it in a new post. Here you go. Another Knottie on this board gave it to me.
1lb ground beef
1/2 onion, chopped
1/2 red pepper, chopped
1 can corn (drained)
1 can diced tomatoes
1 can black beans (drained)
1 bag taco blend cheese
1 package 8 inch tortilla shells
1 can refried beans
1 taco seasoning package
Preheat oven to 350º
Brown beef/onion/red pepper. Drain. Add taco seasoning & water (as directed on package). Cook on med/high heat for 2 mins. Add in corn, black beans, and tomatoes. You can add any cajun spice or red pepper flakes here if you like. Simmer for 10 mins.
In 9x13 glass pan, layer 2 tortilla shells, refried beans, 1/2 meat mixture, and 1/2 cheese. Repeat previous layer. Top with 2 tortilla shells and alittle extra cheese.
Cook, covered 25-35 mins.
** i like to add in alittle taco sauce with each layer**
