Sauteed breast of chicken stuffed with fresh herbs & mozzarella

 

You will need

 

1/3 cup of flour

1 teaspoon of kosher salt,plus additional as needed

½ teaspoon freshly ground pepper,plus additional as needed

½ teaspoon paprika

½ teaspoon garlic powder

4(5-6oz)boneless skinless chicken breasts

1 tablespoon chopped fresh flat-leaf parsley

1 tablespoon chopped fresh basil

6oz fresh mozzarella, coarsely grated

3 tablespoons extra-virgin olive oil

 

Steps

 

1)Pre heat oven to 400,combine flour,salt,pepper,paprika, and garlic batter in a shallow bowl or plate,mix to distribute the spices evenly

 

2) Butterfly the chicken breast

 

3) combine the parsley & basil,,season each breast with salt & pepper.then sprinkle each with 1 ½ teaspoons of the herb mixture.

 

4) sprinkle ¼ of the cheese evenly over one side of each breast,leaving a ¼ inch border around the edge,fold the side of the breast without the cheese over and press gently.

 

5) dredge each chicken breast in the flour mixture,heat a large oven safe sauté pan over medium heat,add oil and heat through.place each chicken breast  in the pan.cook until golden brown,about 3 mins.use tongs to turn the breasts over,taking care to keep them closed,brown about 3 mins then transfer the pan to the oven.cook to an internal temp of 165 degrees or about 6-8 mins.

  

Pasta with herbs and olive oil

6 quarts of water

1 tablespoon kosher salt,plus additional as needed for seasoning

8 oz dried or fresh pasta

1 tablespoons extra virgin olive oil,plus extra for drizzling at the table

 

6 quarts of water

1 tablespoon kosher salt,plus additional as needed for seasoning

8 oz dried or fresh pasta

1 tablespoons extra virgin olive oil,plus extra for drizzling at the table

2 tablespoons chopped mixed fresh herbs(basil,parsley,chives,thyme)

Freshly ground pepper,to taste

2 tablespoons freshly ground parmesan cheese

Cherry tomato halves,for garnish

 

Steps

 

1)      using an 8-quart stock pot with a pasta insert,bring 6 cups of water to a rolling boil.Add the kosher salt and bring back to a boil add the pasta and immediately stir to separate the individual pieces.the water should return to a boil very quickly.cook pasta until firm yet tender,drain reserving some of the pasta drain water.

2)      Pour the cooked pasta into a warmed serving bowl,add the olive oil,herbs and 2-3 tablespoons of the reserved pasta cooking water.toss to mix evenly.season to taste with salt and pepper.garnish with parmesan and tomatoes.

3)      Serve & enjoy.
