Christmas Desserts - What should I make?

My MIL called and asked if I could bring dessert to Christmas dinner. I happily agreed and usually have tons of ideas for dessert, but my H doesn't like chocolate. What are some of your favorite chocolate-free desserts? I am thinking cheesecake but we had cheesecake yesterday, so maybe not.

  • This is my favorite:

    Raspberry Cheesecake Pie
    (I will usually substitute cherry jello for the raspberry.. it's a good combination w/ the real raspberries)

    2 pkgs <3 oz /> cream cheese, softened
    1/2 cup confectioners sugar
    dash salt
    1 cup whipping cream, whipped
    1 pastry shell with high fluted edge, <9" />, baked
    1 pkg <3 oz /> raspberry flavored gelatin
    1-1/4 cups boiling water
    1 Tbsp lemon juice
    1 pkg <10 oz /> frozen raspberries in syrup, thawed

    In mixing bowl, beat cream cheese, sugar and salt until light and fluffy. Fold in cream. Spread half into pie shell. Chill 30 minutes.

    Meanwhile, dissolve gelatin in water. Add lemon juice and raspberries. Carefully spoon half over cream cheese layer. Chill until set, about 30 minutes.

    Set aside the remaining gelatin mixture at room temperature. Carefully spread remaining cream cheese mix over top of pie. Top with remaining gelatin.

    Chill until firm.
  • Damn I was all ready to bust in here with recipes, but 99% of my go-to desserts have chocolate.

    You could do cake pops or cake balls if you don't have the lollipop sticks.  I made vanilla ones last night. They can be time consuming though.

    My mom makes really awesome pecan cups.  They're like mini pecan pies and I could eat like 20 in a sitting.  I don't however, have a recipe for that yet.

  • I'm really big on pie, and they're a pretty easy thing to make if you grab the refrigerated two-pack of crusts from the supermarket. My favorite is a brambleberry pie, and it's easily made in winter. I grab two bags of the frozen mixed berries (blueberries, blackberries, raspberrie and strawberries), let them thaw in a colander for an hour or so to let them lose some of their moisture, and throw them in a saucepan with a 1/4 cup water, 1/2 sugar [though you can adjust this to your preference for sweetness) and the juice & zest of 1 lemon. Cook that down until the berries are soft and the mixture has thickened a little bit, and that's your pie filling. Throw the bottom crust in a pie pan, add the pie filling and spread it out evenly, and then top with the second crust (I like to lattice it for this pie, but a full crust is perfectly fine too). Bake 45ish minutes, until the crust is golden and flaky.

    Top it with some vanilla ice cream or whipped cream and you're good to go! :)

  • I make the best apple pie in the world.  Too bad H hates cinnamon.  :\

    I'm going to make cookies this year.  I also have Godiva hot chocolate and my homemade cinnamon marshmallows.

    Just in case anyone else is up for making apple pie, here's the recipe I use.  It's really yummy if you swap out the top crust with puff pastry.

    INGREDIENTS

    • 1 recipe pastry for a 9 inch double crust pie
    • 1/2 cup unsalted butter
    • 3 tablespoons all-purpose flour
    • 1/4 cup water
    • 1/2 cup white sugar
    • 1/2 tbsp cinnamon
    • 1/2 tsp nutmeg
    • 1 tsp vanilla
    • 1/2 cup packed brown sugar
    • 8 Granny Smith apples - peeled, cored and sliced

    DIRECTIONS

    1. Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, vanilla, cinnamon and nutmeg, and bring to a boil. Reduce temperature and let simmer.
    2. Place the bottom crust in your pan. Pour 3/4 caramel over apples and mix.  Fill crust with apples, mounded slightly. Cover with a lattice work of crust. Gently pour the remaining sugar and butter liquid over the crust. Pour slowly so that it does not run off.
    3. Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft.
  • As the laziest cookie baker in the world, I would like to introduce you all to the easiest peanut butter cookie recipe ever:

    Mix 1 cup sugar, 1 cup peanut butter, and 1 egg together.  Roll into little balls, flatten them with a fork, and bake on 350 for 10-15 minutes.  Voila!  Home-baked cookies.
