NWR Zuccini

I got my first Zuccini out of my Garden!!!! Looking for suggestions on how to cook it for supper tonight!

    slice it thick, brush with some olive oil, season with S&P, grill on the bbq. mmmmmm. I wish my zuchinis were big enough to eat.
  • What Nebb said, plus rosemary. I love zucchini with dried rosemary.

  • tomatoes, onions, and zucchini sliced up - pour a wee bit of scream over, s&p, and top with mozza cheese - bbq in a foil tin. DELICIOUS. Also good with mushrooms.

  • Ditto what Nebb said. It's important to just brush the zuccini with olive oil lightly. I used too much the other day and had to lift off the excess oil with paper towels but it was still kind of gross. We don't have a grill yet so we just cook it in a frying pan.
  • Cook them with mushrooms in a stir fry sauce.  Add cooked chicken and serve over rice.

  • I also love it grilled - cut it lengthwise, 1/8 - 1/4 " thick. I like to brush it wish garlic oil. I always have garlic oil on hand though. I use just EVOO with crushed garlic, and store it in a container. So much flavour.

  • pumpkin: what a great idea! How long does it keep for? I always use EVOO and we're garlic freaks. I never thought of doing something so simply yummy as combining them to make garlic oil!

  • I only probably make about 1 cup of it at a time...it normally runs out before I have to make more.

  • We got our first ones this weekend too! I made a zucchini lasagna *using the zucchini in place of noodles* AND we also made a zucchini bread, both delish!!!
  • My mom used to make a mock apple torte out of zucchini... I don't have the recipe at work, but you slize the zucchini and mix with cinnimon, sugar, flour, etc like apple pie filling and use a crumb crust and crumb topping and it tastes just like apples...
  • I also make zucchini cakes, like crab cakes. Shred and squeeze the water from the zucchini. 2 cups worth. Then I think it's 1 tbsp Old Bay seasoning, 1 tbsp mayo (I also have used fat free sour cream when I ran out of mayo), 1 egg (beaten) & 1 cup bread crumbs (may need more if mix is too moist). Form mix into patties then fry in pan. Sooooo good.
