Fried Rice

How do you make yours?  We're making it for dinner tonight and we were just going to wing it.  Pointers are always a great help.  I like to see different people's variations.

  • I'm no help.  The only time we made fried rice it was kind of a disaster.  I mean it was still rice that was fried, but I was not a fan.  My only suggestion is more soy sauce, and unfortunately I cannot stand the lower sodium soy sauce.

  • Brown rice, diced onions, carrots, peas, scrambled egg, chicken, soy sauce, margarine, fresh garlic.  I think that about sums it up.There's a Japanese steakhouse here with the BEST friend rice ever.  We've tried to replicate it many times but fail every time.  It's soooooo good.

  • I cook the rice seperately and sautee or steam the veggies... then I just mix it together with a little butter and soy sauce. That's what they do at Hibachi restaurants so I just copy them.I want some =/ add that to my wish list.
  • My easy version:1.  Cook rice.2.  Cook meat until mostly done3.  Put a few tablespoons vegetable oil into a large skillet and let heat.4.  Cook an onion in the vegetable oil until soft.5.  Toss an egg into the oinion/oil mix and let cook6.  Throw rice, meat, and sometimes peas into the mix and let cook for a few minutes until it's all warm.

    And betrothed, I'm disgusted with most of the comments that you have posted. I don't think I've ever read such judgmental comments in my life. I'm so lucky that the girls I speak to on theknot are nothing like you...I would've never come on here for ADVICE if I would've encountered a big a bitch as you. I genuinely feel awful for your children or your future children, and I think it would be irresponsible of YOU not to invest in their future therapy sessions starting now.   • I totally forgot to put the soy sauce into my steps.  I toss some of that in shortly after I put in the rice.

  • Use day-old rice. I know it sounds weird, but my grandfather (he's Filipino) makes the best fried rice and he just uses leftovers. He fries it in oil with whatever he has available, usually carrots, onions, ham, and an egg and adds soy sauce. Just season it to taste.
  • HungryGirl does a great low-fat recipe (google hungry girl fried rice). I add lots of veggies... Shrooms, carrots, peas, broccolli, etc. I just made it on Sunday. Two things: use a separate pan to scramble the eggs, or your rice gets all custard-like, and make sure your rice is cold when you put it in the pan.
  • Yeah I've heard from everyone to use day old rice too.  It didn't help my rice out, but my mom makes great fried rice and that's what she does. Oh and definitely yes on the egg.

  • The real trick is using cold dried out rice. Like pp said, day old is best. But when I make it I usually try to make it far enough ahead that the rice has cooled down by the time I try and make it.Keeps it from getting gummy.Make a batch and put it on a sheet pan and either set it out, or put it in the fridge if you need to move it along quicker.
  • I've made if from scratch and I've made it from one of the seasoning packets from the grocery store.  The seasoning packet turned out better to be honest.  I threw a whole bunch of stuff in with it like peas, green onions, carrots, extra soy sauce, and chicken.  Yum, that sounds really good.

  • I cook a chopped onion, add scrambled egg, add everything else (I usually use some kind of meat/sausage, and frozen peas & corn), then add the rice. For flavouring I use soy sauce and a little bit of sesame oil.Fried rice is one of DH's fave meals :)

  • I make sticky white rice. Boil it like usual, but add a bit more water. In a large frying pan, I add a wee bit of OO, onions, mushrooms, and whatever veggies I have on hand and may want in there...I sautee until veggies are soft, add soy sauce and sesame seeds. Then I add the rice, and fry it...slowly adding more soy sauce. Then I toss chopped green onions and sprinkle the top. Voila! I will only use Kikkoman soy sauce.

  • I forgot to say that I don't like meat in my rice...or eggs...so I leave those things out.

  • The trick is to use cold day old rice.  You can get around this by making your rice a couple hours early and then just sticking it in the freezer to cool it down (don't freeze it!).  It gets a lot of the moisture out of the rice so it's not mushy.
  • A friend has a cat named Fried Rice. Sorry that is what I thought of.
