  • Homemade gnocchi was soooo easy, but if it sounds impressive then maybe I'm selling myself short? OK homemade gnocchi, which is technically new and exciting, with the usual sauce that I know I can make and am good at making.So how many are coming for dinner? Show of hands?
  • homemade gnochii is a great idea and a yummy sauce and perfect
  • Baking the potatos instead of boiling gives the gnocchi a lighter fluffier texture instead of the dense traditional texture.

  • Coming in late here... another gnocchi tip, instead of using a fork to break the (baked) potatoes up, invest in a potato ricer. My (Italian) MIL just about had a heart attack when I told her I was using a fork, she went and bought me a ricer. It makes a HUGE difference and pretty much eliminates the chances of ending up with heavy/sticky gnocchi.
