  • Things we almost always buy on a weekly or at least monthly basis:

    - green herb salad/mesclun, I hate iceburg lettuce
    - some kind of seasonal fruit, or else just bananas
    - homemade tortilla chips from a woman who makes them and tamales as well
    - avocados, cause they go with everything
    - some kind of pasta
    - the makings for pesto (garlic, basil, pinenuts, olive oil, salt, I leave out th parmesan)
    - the makings of salsa (heirloom tomatoes, shallots/onion, jalepeno/serrano, cilantro, lime juice)
    - cheese
    - tortillas
    - pizza dough

    I really want to make salsa this week.

  • Saute some zucchini, onions,  peppers mushrooms in a little balsamic vinegar and olive oil.
    Put on a panini bun with some yummy cheese.  I love provolone.
    Throw in the oven for 5 or so minutes to melt the cheese. 
    Serve with soup if you like, but it's filling enough for me for dinner.  I eat this a lot because I am home alone for dinner a lot.

    Pita pizza:

    Pita shell
    Veggies
    Pizza sauce (if I'm out I use tomato paste and throw some oregano on it)
    Cheese
    Bake

    My grocery items:

    cheese - usually medium cheddar or marble
    triscuits
    red, grn, and yellow peppers
    onion
    bananas
    mushrooms
    yogurt
    maybe some meat
    tostitoes
    olives

  • For those who like a little spice:

    Crockpot:
    1 8oz block of pepperjack cheese
    1 regular jar of salsa (I use medium)
    1 can of chicken (I can't stand canned chicken, so I boil chicken breasts instead)
    1 can rotel NOT drained

    This was the original recipe, but I added a can of black beans, drained and rinsed.
    The longer you let it cook, the better.  The chicken just starts falling apart and the beans get cooked if you can let it set for a few hours.
    Put the cheese in first with the salsa or rotel to make sure it melts.  The rest doesn't really matter.
    I've changed this recipe every time I do it, and I can't mess it up.

    I serve it with a dollop of sour cream on top, and tortilla chips if it's too thick.

  • oh and i always have lots of canned tomatoes, pastas, rices, soups in the pantry.  always.  so i can always whip up stuff assuming i have fresh produce.

    Laughing Cow cheese wedges (perfect for triscuits or on burgers, 35 calories)
    Cottage cheese
    baked cheetos
    Frozen meals (Lean cuisines, Wan Chai, anything...)
    Skinny cow caramel cone ice cream
    Sour cream
    Lays kettle cooked jalapeno chips
    chicken breasts
    rotel
    boil in a bag rice

    That was not fun.  I eat a lot of diary and preservatives.  Bad....

  • Things on my short list for being easy to throw together:
    Spaghetti bake
    Crustless quiche
    Chicken quesadillas
    Pork chops thrown in the crock pot with cream of celery soup

  • I buy canned 'Indian food'- Jyoti is the best brand ever. 

    There are plenty of lentil, chickpea, and potato dishes that are fine by themselves over rice.

    For the sauces, I sautee some cut-up chicken, pour the sauce over it, and simmer (usually adding some frozen peas, spinach, or canned chickpeas or lentils)

    And I always have a jar of vodka sauce in the pantry.

  • I like to buy frozen tilapia, salmon, or mahi mahi at the store and add lemon pepper, garlic powder, onion powder and basil to it, all while cooking in a skillet that's been lightly coated with EVOO.

    That's a go-to meal I make, but I could eat fish like, every day.

    I also don't live where it gets cold enough to make many "winter" foods.
  • My favorite vegetarian fall recipe:

    1/2 lb pasta (something short like penne)
    2 sweet potatoes
    few cloves of garlic
    fresh oregano
    pinch of red pepper flakes

    Cook the pasta and reserve a bit of the cooking water. 
    Wash the sweet potatoes and prick them all over with a fork.  Then cook them for 10-12 minutes in the microwave on high.
    Slice the garlic

    In a large skillet, heat some olive oil over medium heat.  Toss in the garlic and red pepper flakes and cook for a few minutes (do not brown.
    Add 6 stems of fresh oregano and let cook for a minute or so.
    Add the flesh of the sweet potatoes and just mix. 

    Toss in the pasta and mix together, adding the cooking water if necessary.  Top with freshly grated parm.
