Recipes involving fresh cranberries

I bought cranberries to make cranberry sauce out of for Thanksgiving.  My grandmother called the day before and said she could bring cranberry sauce and since I was sick, that was cool.  So now I'm feeling better and I've got a pound of fresh cranberries that I need to do something with.  Anybody got any good recipes using fresh cranberries?

  • Butternut Squash Apple Cranberry Bake Recipe

    Ingredients

    • 1 large butternut squash, peeled and cut into 1-inch cubes
    • 2 large tart cooking apples cut into 1/2-inch thick slices
    • 1/2 cup fresh or frozen cranberries
    • 1/2 cup brown sugar
    • 1/4 cup (half a stick) butter
    • 1 Tbsp flour
    • 1 teaspoon salt
    • 1/2 teaspoon ground mace (can substitute ground nutmeg)

    Method

    1 Preheat oven to 350°F. Slice and peel squash and apples.

    2 Put squash cubes in ungreased 7x11-inch baking dish. Place apples on top and then cranberries. Mix the flour, salt, sugar, and mace and sprinkle on top. Dot with butter. Bake 50-60 minutes.

    Serves 8.

  • You can stuff them into a piece of turkey or chicken with some onions and apples and roast the meat in the oven. They burst and get all yummy. MMMMM!

    You can also just make cranberry sauce still. I bring 1/2 cup water, 1/2 orange juice, and 1/2 cup of sugar to a boil on the stove, stirring to melt the sugar and then add the cranberries, reducing the heat to low/medium. Cook on the stove for 10 minutes stirring occassionally. Delish.

  • Cranberry salad!
     It has Cranberries (crushed), pineapple, cool whip, sugar and marshmallows. The recipe is in the kitchen and I'm too lazy to get it unless you want it of course haha
  • Jajph, that sounds delish and kind of like one of my mom's recipes.  Definitely will try it. And shannon, I'm cranberry sauced out, but I hadn't thought of stuffing a piece of meat with them.  That sounds great.

    Tim makes it every year for Thanksgiving and Christmas. Out of everything on the table, that is my favorite dish.

    We stuffed our turkey with cranberries, apples, celery, and onions and it was so goooooood. You just have to be careful, because the cranberries take some time to burst.

  • 4 cups fresh/ frozen cranberries
    1 cup sugar
    1 pint whipping cream (I always just use cool whip)
    1 cup crushed pineapple (8 oz can)
    3/4 lb mini marshmallows

    Crush cranberries in a food processor or blender. Add sugar to cranberries.
    In a seperate bowl, mix whipping cream until stiff (unless you're lazy like me and use cool whip) add marshmallows and chill for 2 hours.
    Mix crushed pineapple into cranberries. Gently fold into the whipping cream and marshmallows. Yum!

  • Haha no problem, I actually got up to get some of the salad which I made for Thanksgiving and figured I should get the recipe too
  • I've added cranberries to banana bread before and it was really good. Also go to oceanspray.com and they have lots of ideas.

  • Orange-cranberry nut bread or muffins.

    Baked apple pie with cranberries and nuts, or just baked apples with cranberries.

    Make your own cranberry juice, or make cranberry sauce or jelly and seal it in a jar.

  • Spiced cranberry-orange compote with merlot
    1 package cranberries (12-16 oz)
    2 navel oranges, all peel, pith, and segments removed
    2 cinnamon sticks
    5'ish whole cloves
    1/4-1/2 cup sugar, to taste
    1/4 cup merlot
    Combine all ingredients in medium saucepan, stir over medium-low heat until sugar is dissolved. Reduce heat to low and simmer, stirring occasionally, until all cranberries have popped. Serve warm or cold. Also nice with addition of 3/4 cup toasted walnuts.

    You can also decrease the sugar, leave out the cinnamon and cloves, and add a chopped shallot before cooking. When fully cooled, add a couple of tablespoons of grated horseradish. Serve cold over a block of cream cheese and crackers or pita chips.
