Saturday!

Whats up ladies?

I just got back from the gym, and not only have I gotten over my hump of running a mile.. I banged out two miles today. Plus lifting. I am sore and sweaty and fvcking loving it.

Good luck to LDY and Chrissy as they tackle the memphis half and whole marathon (respectively).

Today I will clean up the house and then take Sofia (wittle fiv kitty) to get her vaccines. Then I need to go grocery shopping for the week. So fracking exciting eh?

    My realtor is keeping my hopes alive for the house we bid on, so today H and I are filling out mortgage paperwork.

    Also, I need to exercise.  And grocery shop. 

    But mostly I just want to be lazy today.  :)
  • Also lets make this interactive. I know people are here are awesome cooks in the kitchen when it comes to healthy eating, so share with me you favorite healthy recipe. I have free reign for dinner tonight and I want to wow H.

    I'm at work.  And then I'll go home and sleep and work some more tomorrow.  Also quite exciting!  And I'm waaaaay too awake considering I only slept about 5 hours last night.

  • I WANT TO TRY QUINOA TONIGHT. but burgers scare me because H doesn't eat ground meat (of any kind) because of the texture and I worry the texture will be similar enough that he wouldn't be able to eat it.

  • hmmm, Rosie, do you think he would do green peppers stuffed with quinoa? Or would that seem like ground beef too? To be fair, I make mine with ground turkey, so it probably wouldn't work.

    I'm currently trying to style my mangy Snow White wig for a party this morning.  The fact I get to be Snow White (which is my favorite costume) ALMOST makes up for the fact that the party is so early.

  • The chicken is SO GOOD.  The sauce is just amazing.  I use a dry Riesling, you can use any dry white wine really. I don't care for Marsala as much.  And I use the cherry flavored craisins, and then I eat them like candy while I'm cooking and don't want to eat dinner.

    But...minor details.

  • Rosie, here's the link to my food board on Pinterest.  There are some fairly healthy main meals pinned on it. I want to try the slowcooker chicken that is pinned at the top. Maybe next week. 
  • Good morning. I'm messing around with my rsvp envelopes. Does this look okay? As far as font goes? I'm cheating and printing the envelopes with a light font and then going over with black pen.

  • Morning! I'm heading to my first Zumba class with my mom. I'm pretty nervous. Then I think I'll grade and lesson plan so I can have the rest of the weekend free. I love quinoa... I put it in a mango salsa and then use that as salad dressing. Yummy.
  • Morning! I just got back from the farmer's market and was kind of dissapointed. There was only one veggie vendor there and he didn't have much. I know it's January but the last time I went was three weeks ago and they still had tons of stuff. Anyway, I still got fresh eggs, a whole chicken, and an oxtail. I've never cooked a whole chicken before and I've never even tried oxtail so we'll see how this goes. I guess I was feeling adventurous!

    Rosie, I love quinoa, just plain. Make sure to cook it in chicken stock, not water, it will taste much better. I also love a quinoa salad where I just add some chopped veggies (tomatoes, cucumbers, peppers, whatever), toasted nuts, some feta or parmesan, herbs, and then I dress it with olive oil and lemon juice.
  • Anna, oxtail is delicious - great for stewing or braising. Maybe a ragu, if you're stuck for ideas?

    If you make it again, try putting the eggplant and zucchini pices in a big bowl and tossing them with a teaspoon or so of salt, and letting them sit for about half an hour. Squeeze them out then pat them dry with a paper towel - you should have a good sized puddle in the bottom of the bowl and much less liquid in the dish after baking.

  • Good Morning! I just finished breakfast after working out. We're going hiking at a local park followed by a picnic.

    Rosie, my sister made this: http://health.yahoo.net/articles/weight-loss/photos/diet-tips-food-flips-weight-loss#3 and she swears you can't even taste the butternut squash. She said the turkey meatloaf is also awesome (doesn't help if your H doesn't like ground meat), and the tomato soup is "ok".

    Tell your husband he's not strange. My BFF from college can't eat ground meat because of the texture.

  • I love quinoa.  You can cook it as you'd cook rice, serve it the same way too.  I cooked it in a combination of water and chicken stock, added some green onion.  After it cooked, I mixed it with cherry tomatoes, fresh parsley and lemon juice.  It was a great side dish to serve next to a roast.

  • Oh, the house!  It is killing me waiting to hear!  It has huge windows and a huge walk-in shower, long enough that no shower curtain or door is needed.

    I just got a few new cooking toys for myself, so I'm going to try to use them.  I have a stovetop smoker, so I want to try to make smoked shrimp.  I'm going to try making a healthy grits and a healthy braised collard greens recipe.  I'm going real Southern this weekend.  :)
