  • did anyone say just a straight up caprese salad?

    or how bout tuna salad or a chicken salad? I make a really yummy chicken salad with rice-just your standard chicken, grapes, cashew, celery, mayo, mustard, and white rice to make it bulkier.

  • I love lettuce wrap sandwhiches! How about tofu? You can marinade it like any meat and it would be "differnent." I like tofu egg salad. Or chili, I make a huge pot and freeze. It's great cold with chips. Also, try some GF box stuff. Cherrybrook Kitchen has GF cookie mixes. Probably not the healthiest option but they are damn delicious!

  • Dot, I DO have a thermos....somewhere.  If I can find it, I can see if it's good enough to keep soup warm for long enough.  I do love soup.

    I make a turkey salad with turkey, celery, green onions, dried cherries, pasta, and poppyseed dressing with Thanksgiving leftovers, but I bet it would be good with chicken too.  That's a good idea.

    I've never tried chili cold.  Interesting idea!

    I haven't seen corn pasta, DJ.  Hmmm, I'll have to look.  I have seen quinoa pasta, and I'm going to grab some to try when I'm out of the rice pasta I have now.  And also?  I don't believe I've congratulated you yet.  So congrats!!!

  • Since you said you love avocado, you need to try this.  Seriously, it's lick the bowl clean good.

  • I'e seen that, Drama, and I love egg salad, but for some reason the combo doesn't sound good to me.  I should try it though!

  • H was really "eh" about it until he tried it.  Yeah, he ate all of it, I only got one serving!

    My mom loved it too.  She did add extra salt, I think, or some lemon herb seasoning.  Can't remember which.
  • Gazpacho - I love both the traditional tomato based Gazpacho, but also the fruit variety. I have several recipes I've found that I make in the food processor. It's great cold or cool. But, I'm a freak and love all my food cold. The fruit gazpachos are really good with shrimp.

    Sauteed Spinach with onions - I saute mine in white wine, or Chardonay Vinegar and/or some dijon mustard and eat it cold. I love spinach.

    Hummus is another favorite.

    I did Gluten and Dairy free for a few months and lived on Spinach, Hummus, and Sugar Snap Peas.

    Now, I'm too lazy to cook and just take my debit card to work for lunch.

  • Steffi, all those things sound delicious...but would not be enough food for me!  I need some protein and fat in my meals :)

  • I love these two recipes (and so did FI, which means they didn't taste too "healthy"):



    I like both of them cold, and I'm sure you could make the noodles with something gluten free.  I also struggle with lunch--I'm not on the road like you are, but I'm often  between my client site and my project site, or my HQ, so I have to do stuff that's portable and holds up well.  Lately, since I do crossfit 3 mornings a week and don't have time to really eat beforehand (its a 615 class and I need to be on the metro by 530), I make a protein smoothe with frozen berries, whey protein, almond milk, spinach, and greek yogurt and poor it into my camelback stainless steel water bottle, and it's cold at 10/1030AM.  (My REI hot thermos keeps stuff warm for 5-6 hours as well for those who suggested soups).
  • I use rice sticks for Asian dishes, and actually, looks like that's what the recipe calls for.  Yum.

    Just told them what I wanted to eat and they would bring it to my desk.

  • Yeah, skinnytaste has been pretty good to me (and I definitely read about it on TK).  For the Asian recipe, I used the lower-fat peanut butter she recommended and it was great.  FI actually ate it straight out of the jar and, with a mouthful of peanut butter goes "this is good, why does it say its low fat?"  Didn't even realize it called for rice noodles but I guess thats what I used when I made it :)
  • This isn't a summer lunch but I used to pack a hot baked potato in a thermos for M to take to school.  I'd put  asmall container of cheese & sour cream in with it
  • I came into this thread thinking I could give some advice to OP, and ended up getting some great ideas from PP's! 

    Lettuce wraps are amazing; I don't know why I didn't consider bringing them until now!  My usual work lunch is roasted chicken breast on top of a romaine lettuce and tomato salad, topped with a serving almonds or sunflower seeds.  But... I've been eating this five days a week for the last four months.  Keep the ideas coming, folks!

    Today, though, my lunch is pretty sorry... we have nothing at home right now except canned goods and saltines.  I brought a can of Heinz vegetarian baked beans and a spoon.  Yeah, I'm that awesome.
