Not only am I fashion challenged, I'm kitchen challenged as well. BUT I found this recipe (linked from Brie's fitness blog actually, thanks Brie!) and have had great success with it this week and last so I thought I'd share:

And here are all of my caveats, haha:
I had to leave out the leeks (because H did the shopping and didn't know what they were) and the parsley.
I used shredded mozzarella cheese instead of goat cheese because I'm a cheese-phobe
And I used minced garlic instead of fresh because H just didn't buy it for whatever reason.
And I had to google "saute" to make sure I was doing that right.
I used frozen spinach (and should have thawed it and drained it first probably) and I think when I make them in the future I’ll use less spinach and add some broccoli.
I added one more whole egg because I had so much spinach/onion mixture.
I recommend only re-heating them for 30-40 seconds, not 1 minute.
I also would have done the sautéing sooner because it took a long time for that stuff to cool.
BUT they are freaking awesome and I got 10 muffin cups worth out of it.
