His mom and my grandma will have corsages.

Do we get corsages for my dad's girlfriend and my uncle's fiance?

I wouldn't for your dad's girlfriend. She isn't your mom.

And your uncle gets one because he's officiating. If you get one for your aunt, you best be prepared to get one for all of your aunts.

I don't think I would.  Your Uncle is only getting one because he's officiating, so I don't think that means his wife should have one too.  If you do that, then you need to get them for all of the aunts and that's just totally unnecessary.
