Any good salmon recipes?

I bought some fresh salmon filets at the store yesterday and am looking for recipe ideas.  I don't actually like salmon, haha, but it's so healthy I'm trying to find new ways to make it.  In the past I've done a honey/molasses glaze which was pretty good, but a little high in sugar to do it frequently.

Any yummy recipes that aren't very fishy?

  • I buy packs of the creamy pesto sauce (you just add milk to the powder) and pour over the salmon after it is done in the oven. (I'm lazy like that)

  • I just rub the salmon in oil or melted butter and a squeeze or two of lemon juice mixed in. Throw some lemon pepper on top and broil. 

    But that's not very healthy. ;) I find lemon + fish is really yummy.
  • I don't know how fishy this is.  I like to bake it with some white wine and lay dill and lemon slices on top (lemon over the dill to hold it in place).  It's delicious hot and cold the next day.

  • I put the salmon on a sheet of tinfoil, place a bay leaf on top, then a slice of lemon on top of that, then wrap it all up and stick it in the oven.

    Or, you could make it with a soy sauce/honey blend on top, but that's not quite as healthy ;)

  • I squeeze lemon and then sprinkle on some clubhouse salmon seasoning.  Easy peasy.

    This is good. It does use a little caramel but the mustard and soy help balance it out.

  • Thanks ladies :-)  I'll have to add a few of these to my list and try them out!
  • I just drizzle it with olive oil and lemon juice then add salt, pepper, grated garlic and lemon zest then bake it in the oven. It's really easy and if you put enough salt and pepper on it forms a nice crust.

    I will warn you, one time I did this the garlic turned bright turquoise, which was weird, but it still tasted good.

  • I spread salsa over the top of the salmon and bake it on 350 - it cuts down the "fishiness" of the salmon, and it's ridiculously easy.  You could go fancy and make your own salsa, but salsa from a jar works too.

    Yeah, Adamar, I'm not quite sure what happened. I thought it might be the garlic reacting to the acid in the lemon juice, but I mix raw garlic with acid all the time. Like I said, it still tasted good, and at least it was interesting looking.

    </div><div>Apparently, the garlic has a sulfur compound which can react with copper (mostly likely from the lemon juice) and forms blue copper sulfate.  Huh.  The more you know I guess.</div>

  • I like to put a thin layer of dijon on the top of the fillet. Add a little butter to italian bread, just until it's damp. Put the bread crumbs on top of the salmon and then cook in the oven at 350 for 10 minutes, then under the broiler until the bread crumbs are browned and crispy. It's really good.
  • Interesting, Froggie. I guess my instincts about the lemon juice were correct.

    grill the salmon and make a glaze:

    1 cup extra virgin olive oil
    3/4 cup molasses
    1 clove of garlic
    Squirt of lemon juice for taste

    mix this all together and baste on the salmon while you grill. should take about 15-20 mins.

    i usually service with asperagus.

    I love this South Beach Diet recipe for salmon. I just do the salmon in the oven or a pan though, and I sauté the spinach. I also omit the sugar substitute, I don't see the point. 

    Five Spice Salmon

    Ingredients:

    • 1 1/2 teaspoons finely grated lime peel
    • 3 tablespoons fresh lime juice
    • 2 teaspoons extra-virgin olive oil
    • 4 teaspoons finely chopped fresh ginger
    • 1 teaspoon Chinese five-spice powder
    • 1/2 teaspoon sugar substitute
    • 1 pound salmon steaks, cut into 4 equal pieces
    • 8 cups fresh baby-spinach leaves
    • 2 cloves garlic, pressed

    Directions:

    1. In a 2-quart dish, combine the lime peel, lime juice, 1 teaspoon of the oil, ginger, five-spice powder, and sugar substitute. Add the salmon and turn to coat. Cover and refrigerate for 30 minutes.
    2. In a 3-quart microwavable dish, combine spinach, garlic, and remaining 1 teaspoon oil, tossing gently. Cover with plastic wrap and microwave for 2 minutes, or until the spinach has wilted. Drain and keep warm.
    3. Lightly oil a grill rack. Preheat the grill to medium-high.
    4. Remove the salmon from the marinade and place on the grill rack. Brush the salmon with additional marinade. Close the grill cover and cook for 4 minutes. Open the grill cover, turn the salmon, and brush with marinade. Close the cover and cook for 4 minutes longer, or until the salmon flakes easily. Discard any remaining marinade.
    5. To serve, evenly divide the spinach among 4 serving plates and center the salmon on the spinach beds.

  • Both are very easy and delicious but one is healthier than the other!

    Put orange or other citrus marmalade on top. Bake in the oven. SO good!

    Or mix light brown sugar with dijon mustard. Rub on top of salmon and bake.
