Food!

So wednesday we're having a little potluck at work and I have no idea what to bring. I'm kind of considering a recipe of my moms for "Foris pie" (chocolate pie shell, choc. pudding, cherry pie filling, cool whip and milk). I'm open to pretty much anything as long as the ingredients are simple (read: cheap) and its fairly non time consuming. Suggestions?

  • In the jello aisle they have those pre-made pie shells.  On the back of them they have recipies.  I use them all the time and they are similar to your idea.  No bake and instant.

  • Death by chocolate:

    Trifle bowl with a layer of chocolate cake with kaluah, then a layer of chocolate mousse, whipped cream...then repeat the layers until the bowl is full

    Worms in dirt:

    Mix chocolate pudding, with cool whip, and crushed oreos, and then mix in gummy worms.  Top off bowl with the crushed oreos.

    Hamburger cookies:

    2 vanilla wafers (bun)
    red and yellow frosting (ketchup and mustard)
    thin mint cookie (burger)
    coconut with green food coloring (lettuce)
    ...assemble so it looks like a hamburger and voila!

  • My go-to potluck dish is homemade mac and cheese. It has bacon and pepperjack and  is a delicious crowd pleaser. Not sure if your set on a dessert though.
  • OH the girls would kill me for all that fat and sugar. I love it.
  • Sunshine- not set on dessert but one of the girls makes to die for mac n cheese and I think she may bring it.
  • How about some super easy (and delish) fudge? The only problem is that it needs to kept slightly cool to keep from melting.
  • We have a great green bean recipie that is always a hit. There's never any left.

    2 cans green beans, drained
    2-3 strips bacon
    rubbed sage
    minced onion
    salt
    pepper
    vegetable shortening
    sugar
    2-3 cubes beef bullion

    We don't really measure, just put some in there. Put all in a pressure cooker and cook on high until it starts whistling. Then lower to med-high and cook about 12 min.
    They are the best green beans I have ever, ever had.

  • LVB- that sounds amazing. I don't have a pressure cooker...Is there another way to do it? (cooking is not my forte, baking however..)
  • No, the pressure cooker is what seals in the flavor :/

  • Lvb- those may be a winner. I'm obsessed with bacon wrapped stuffed figs/ dates. I'd make those but they're too much work/ too expensive.

    I'm leaning towards bacon wrapped green beans and the death by chocolate.
    My BFF keeps raving about some strawberry pretzel dessert, that sounds good too.
  • Oh! I do have an awesome recipe for jalapeno poppers,
    Which I bestow on anyone who wants it. These have saved me sooo many times:
    lb bacon
    6 jalapenos
    8 oz cream cheese
    12 toothpicks

    cut each jalapeno  lengthwise and deseed
    fill each jalapeno "boat" with cream cheese
    microwave bacon to just before crisp.
    wrap cheese filled jalapeno halves in bacon strip and secure with toothpick
    bake at 350 for 15 mins, or until bacon is crispy and cheese is melted.

    Um.. yum! *drool*

    Will these be ok reheated at lunch? Are they super spicy?
    LAtely I've been craving cream cheese stuffed stuff (crab ragoon, cranberry puffs...)
    Oh and how many will that feed? Theres just 4 of us.
  • They are definitely okay reheated. Be careful not to reheat too much though, I'd say 30 sec's a batch (if microwaved.)

    The recipe feeds 6 normal people,with two poppers each. But I'm sure three of my friends and I could finish the batch. They are also not bad cold.

    You actually don't need all 8 oz of cream cheese, probably half (or less) of that. I think 8 oz is the smallest portion you can buy though.

    I actually got this recipe from a coworker, and am now forced to make them for every family/friend event. Happily obliged though.

  • Not if you deseed and devein the peppers! People who don't even like spicy things request that I bring these.
  • Oh, yes. Amazing, lvb! You will not be disappointed.

    I will caution: the sweeter bacon (honey smoked, etc) doesn't work as well for me. I'm not a huge fan of savory/sweet combos though.
    I go with hickory or peppered., fyi.
