I know every once in a while there is a post about year old wedding cake so i thought i would share my experience!
yesterday was our 1 year anniversary so we took the cake out of the fridge to defrost. our cake was not the actual top of our wedding cake but a small cake that was kept separately for us to keep. the cake was surprisingly good! it was actually better than some fresh cakes i have had for birthday parties, communions, etc. throughout this year! the icing tasted fine but the idea of it kinda skeeved me so i didn't much of that but the inside was great! our cake was chocolate with chocolate mousse filling.
my MIL wrapped the cake up for us - wax paper covering the cake, then 2 layers of foil over that, then 2 layers of freezer bags. i thought it was a bit much but i guess it worked!
