We booked the ceremony package 11 months out and the reception suite a few days ago, more or less 6 months out. I felt that we weren't necessarily on a rush booking the ceremony because our wedding is on tuesday but I would definitely move sooner rather than later if yours falls on a weekend. Same this for the vista suite, those book fast. As far as the time, it depends on what you both want ... getting married late afternoon and catch the sunset during the photo tour, or later at night and bring the party to club or lounge... tons of possibilities. We get married at 1 pm because our families in Europe will watch the live webcast and since they're on a different time frame we can't make them fall out of bed in the middle of the night to catch the show LOL :-)

We booked our wedding about a year out from the date.  We wanted an earlier time, as some of our guests were elderly and we didn't want anyone to tire out.

Our ceremony was at 4:15 and lasted 15 minutes - including walking in and out of the chapel.  We did pictures for just over half an hour, then hosted our guests to dinner at one of the MB's restaurants from 5:30-7:30.  After dinner, most of our family members went home and we continued to hang out with our friends.

Hope this gives you an idea on how you can plan your evening.  GL.

We are getting married at 4PM, I don't think 3PM is too early at all.
The only thing you may want to consider is the heat if it is during the hotter months.
We booked our package at The Bellagio 16 months out as we wanted a date set as far in advance as possible as our guests are all coming from London and Australia.

We're getting married at 5 pm with cocktail hour 5:30-6:30 and then dinner starting at 6:30.

When you ask if it's too early, what do you mean?  Are you worried about people dancing and such?

My sister's wedding was at 1:30 and people still danced.  Not a lot but some.

I don't get married often, but when I do, I do it in Las Vegas.
