Night Poll: What's for dinner :D

Let's hear it...

I am in the mood for "How many things in my pantry can I throw into this dish so we don't have to move them when we close on the house" mode.

Therefore, I am making a braided calzone stuffed with a mexican stuffing (cheese, black beans, salsa, chicken, corn, rotel, etc) and baked with a homemade queso fresco dipping sauce.

  • Since FI works third shift I am making Asian Sesame Salmon and some veggie and maybe mashed potatoes since I have no rice. That shredded salsa chicken sounds yummy, do you put it shells like a chicken taco or something? May have to make that one night when I know I'll have no time to cook with finals nearing.

  • MMmmm, that sounds good!  I had cereal, cause I ate way too much at lunch.  But frosted mini wheats are still tasty!

  • I sautéd mushrooms, celery and an onion, added some brown rice and chicken stock for a rice dish.  With it I had a chicken breast and some broccoli.  Very tasty.  I usually cook enough for left overs on the weekends and then we eat alot of leftovers during the week.  My 18 year old son usually comes home and eats after school and my husband is sleeping because he works nights so by the time I get home after work I am the only one hungry.  I gets really old eating alone every night so sometimes I just have a bagel or cereal.

    Baked chicken, acorn squash, broccoli, & a banana for dessert.  I wanted something that was easy to make and didn't require me staying near the stove.  It was really good and now I am stuffed.

  • We are having pork tenderloin, homemade stuff, mac and cheese and rolls. The stuffing and the rolls are left over from last night. I am making the mac and cheese while the FI is doing the meat.

    But I have to agree that the stuff calzones sound good to me!

    I have no idea what we're having for lunch. It's 6:20 p.m. and I'm about to head home. Oy. I really need to do more meal planning in advance, as I'm sure this will be yet another night of getting take out :-\
  • Hamburger helper... It's just a matter of whether I want bacon cheeseburger, classic stroganoff, or classic italian shells. Oh, and peas to get my veggies in :)

    I do this, too. I make FI cut off ALL of the fat and veins on my pieces of chicken because I can't stand all that stuff.

  • I had a microwave Indian entree with brown jasmine rice and I made my fiance baked catfish filets topped with mozzarella cheese, tomatoes, banana peppers, lettuce, and horseradish sauce.  And we both had eggplant fries on the side; this is how vegans and omnivores live together Smile

  • Tonight I'm feeling lazy so I'm making grilled cheese sandwhiches and salad. Last night would have been a better night to ask this question. I made broiled lamb chops, sauteed spinach, and couscous with shallots, tomato, and cucumber. My only regret was not having any feta cheese to throw in the couscous.

    with this chicken- you don't have to worry about the time much. i promise, we've left it for much longer without it burning. you can totes leave it while you're at work.
