I've got a pretty good cottage pie and my yorkshire puds are on the money but I'd die for a lovely meat pie recipe.  Something savory and ridiculous that i can smother in HP sauce.  We always just bought them at the butcher shop when I was young so never learned to make them.  My favorites were mutton, thick, lots of spices, and round with a crust lip on the top so that the HP sauce wouldn't drip out.

You a fan of pork pie? They're fairly small, usually sliced for salads and things. Or my dad likes to eat them on their own for lunch.

Quite similar in some cases with gravy and such, and in others it's closer to like beef wellington.  More of a solid mass of meat wrapped in a light and flaky dough.
Cottage pie? Tell me more. Please.
Posted by Megbo2012
Cottage Pie. Traditionally made with beef mince but can be made with lamb (Shepherd's Pie). All measurements are approximate, at the end you want a moist texture that holds its shape (like a good slab of lasagne).

Cook off some chopped onion in some oil until translucent (veg oil works much better than the spray, not much is needed). Add the ground chuck, brown. Drain if you'd prefer, but the flavour is nice to keep.

Have some potatoes boiling away for mashed potato however you like to make it (mine just has salt, pepper, a little butter and milk to make it nice and creamy).

Add some brown gravy to the chuck. Then everything is in quantities you prefer. A little salt and black pepper. In the UK I'd use Mixed herbs but here I use a mixture of Marjoram, Rosemary, Thyme, Parsley and Sage. I also add (usually frozen) things like corn, peas, carrots. Small Brocolli pieces would work too. Maybe green beans (of course you can skip vegs and just serve them on the side, too). Cook it down a bit until you're not losing all the gravy through a slotted spoon (this is just basically how I eye it).

Grease (spray oil works fine) an ovenproof dish. Place the meat mixture in the bottom, cover with potato.
Options:
-Create ridges in the potato with a fork. These ridges go nice and crispy in the oven.
- Sprinkle the top with cheese
- Sprinkle breadcrumbs on top.

Bake at 400 degrees for roughly half an hour - Everythings cooked already, so its mainly to really brown the top nicely.

Alternative - Instead of mashed potato, slice the potatoes thinly and arrange the slices over the top.

That MIGHT work!  I'm totally motivated by food.  When I hit 50lb weight loss, I'm planning one heck of a food-fest.  As much seafood as I can eat and a big cheesy crab dip in a bread bowl, and a mini-cake made by our wedding cake baker.  Pure deliciousness.

Amt:  No bit of tomato paste in your meat?  I do a bit (maybe a T) of tomato paste in with the ground meat while browning and then cook it down with a bit of red wine (scrape up the bits on the pan bottom)  to make the gravy.

I learn new things every day.  Of course, my cottage pie was taught to me by a Scot.

Nothing that good out here what with South Dakota being landlocked, I'll have to settle for Red Lobster-esque seafood.  I miss the shore where i could eat seafood at every meal.  It's mostly beef out here.

Ah! I've not heard of it done that way, but whatever you enjoy :). I cook mine the way my dad always does (he was the cook in our family).

It wasn't until Thanksgiving that I had some sage (for stuffing). I started putting it in the meat mix, and now all H wants is cottage pie. lol.  Maybe sage is addictive?

At the Christmas party we went to last weekend, he volunteered me to make cottage pie. I thought it would be a little odd for party food but it seemed to go down quite well ;)

I always used to get them confused. The only way (even now) that I can remember the right name is lamb - sheep - shepherd. :)

I often think Americans (and others) have the wrong impression about British food. I hear so often that it's bland... I converted our next door neighbour because she'd had bad cottage pie.

A lot of our recipes are very very old. Times when herbs and spices were expensive and hard to come by, meat was expensive. Poorer people would get by on broths from the cheaper cuts of meat (incidentally, where much of the flavour is) and potatoes.

Yorkshire puddings, nowadays are made to be crispy and full of air. Originally they were very thick and doughy, and you'd eat that before the meat was brought out (so as you'd eat less meat).

British food is just really hearty meat and potatoes stuff. :) Kinda like Coddle - its Irish, but its basically potatoes, sausage, bacon, all boiled together like a stew.

Comfort food at its best. :)

Agreed.  I like my puds a bit on the thicker side personally with a nice thick bottom to hold all the gravy that I dip them in.  Perfect with a nice roast, taters and carrots..  Now I'm hungry.  I think most of the people out here in un-diverse SD think Brit food equals bangers and mash, fish and chips, trifle, and spotted diick.  To be fair though, I could eat pub food every day.

LOL Ok well then Welcome =)

It's an awesome sig! Cracks me up everytime I see it! (As well as the skipping horse LOL I can't recall off the top of my head who has that but I think she's on E.)

I dont think you could ever say Bazinga enough times in a day, can you?

I bought FI a Bazinga shirt for xmas lol
