Accountability - Friday

How is everyone's journey going? Anyone hit any goals?
I have the weekend off so going to be hitting things hard this weekend :)
I have been debating investing in a crockpot, nothing fancy, but I used to eat SO much better when I had one... lol Not that I eat BADLY now, but I could probably work harder to make sure that I'm getting the proper balance of foods.

  • I'm doing a spin class at lunch today but I think I'm gonna take it easy this weekend (workout wise). I have so much going on and I'll be out of town for a good chunk of it, so I'll stick to some yoga or maybe a short run. My body feels really tired too; I've been pushing it pretty hard, not sleeping well and I'm PMSing so my muscles ache.
    I know I need to listen to my body before I hurt it ;P

  • I have a crockpot, but don't know how to use it for healthy foods. Especially in the summer. Does anyone have any healthy, summer crockpot recipes?

    Not crockpot... but I tried an AWESOME new recipe I had to share

    Jalapeno popper stuffed & baked chicken!

    8 thin chicken breasts dipped in lime juice/olive oil then dipped in italian bread crumbs

    filling is 3 oz of lowfat cream cheese & low fat shredded cheddar & 3 chopped jalapenos (I skipped bacon, but that's included in the recipe)

    fill chicken breasts... cook for 20-25 min at 400 degrees.

    Spicy but SO GOOD! And it's really not that bad for you at all!

    I've been running more often and eating a bit better than usual.  I haven't been posting much accountability stuff because it frustrates me whenever my stomach prevents me from working out.  I have an appointment next week so hopefully things will get back to normal soon.

    I will have to dig out my crockpot recipies when I get home (at work now) I used to use it quite often so I'm sure I've still got some good ones at home I can find :)
  • I've had a crockpot for years and I must say I just started using it within the last few months - thank you pinterest!!!! There are to many recipes to add but feel free to follow me and steal them that way :) just search Trina Whalen

    As for accountability, still eating decent and trying to go to the gym on a regular basis. Work sometimes gets in the way cuz hrs are sporadic. We are going on a 5-7hr hike on Sunday, that should be interesting, up the mountain so we will definitely run into snow as we get higher - yikes!
  • I did a boot camp class yesterday and I haven't sweat that much in years, it's only once a week so I'm going to try and make it there every Thursday! 

    Nikki that recipe sounds awesome!  We try and make a brand new meal at least once a week, so I'll try that next!
  • FI and I were being lazy yesterday.  We just got caught up in doing stuff around the house.  But then I told him that we weren't allowed to skip the gym, so I kicked both of our butts to the gym last night.  Also, since cutting out sugar, I've dropped 4 lbs.  Although I cheated today and ate a grahm cracker cause it was calling to me.

    This weekend will be difficult cause I'm going on a road trip with my dad to visit my sis in the hospital.  It's nearly impossible to eat healthy when you're in the car for 14 straight hours.
