Share your Fav Healthy Recipies

We have a lot of girls trying to get in shape for the wedding day, and often the hardest part about sticking with a diet is finding healthy food to eat that is good, and not just the same bland stuff... 

So share your favourite healthy recipies here for everyone to enjoy :)

    So in the other thread adktd2boots was asking for my hummus recipes.

    so first of all, i LOVE hummus, and it's great to dip anything into (celery, carrots, pita chips, other raw vegetables, etc).

    but if you want to use it as part of a meal instead of just a snack, i actually got the idea from the bottom of the lid on the sabra hummus (my favorite):
    ingredients:
    -tortillas (i use la tortilla factory wheat tortilla's. they are low carb/high fiber and protein and only 50 calories).
    -hummus
    -lettuce
    -chicken (or vegetables for me!)

    i just spread the hummus on the tortilla. use as much or as little as you want. then i take a large piece of lettuce and sort of make an inner shell of that. then i take oven baked chicken (i get the boneless chicken breasts, coat them in pam, bake them at 400 degrees for 30 minutes, turning it over halfway through). I slice the chicken into thin slices, but you can probably cut it up whichever way fits best in your tortillas.

    but since i am a vegan, the chicken is just for Dan. I usually just chop up a bunch of vegetables (onions, peppers, zucchini, mushrooms, whatever), and saute them for like 15 minutes. i usually add salt and some bragg's seasoning.

    then put either the chicken or vegetables in the tortilla and fold or roll, however you want to eat it. Dan actually folds it and then cuts it with a fork and knife. i just eat mine like a taco.

    I also try to always keep a bag of baby carrots and cut up celery around just to dip in hummus/have on the side. :)

    i also sometimes will make sandwiches with hummus. just spread it on the bread and add vegetables. i usually use lettuce, cucumber, pepper/tomato slices, etc.

    i don't know much about cooking so i always prepare things the same way, but i think Dan likes how i make things and i'm slowly building up a variety. i lived at home til last july (when we got engaged/bought a house), so when i was at home i basically just ate steamed microwave vegetables everyday. now that i do my own grocery shopping its much easier to have a variety. i've had to learn how to cook, which i love, but i obviously need practice.

    I have a few stand-bys:
    Zuccini stew
    Italian turkey sausage 4 links
    2 cans Stewed Tomatoes (I get the ones with italian seasoning added)
    2-3 Zuccini
    2-3 Yellow Squash
    Garlic to taste
    Mushrooms (optional)
    A can of corn (no sodium added)
    Cut up onion, zuccini and squash add 2 stewed tomatoes, mushrooms, garlic (fresh or miced from a jar I've used both) Brown sausage in another pan, add to veggies and simmer down for about an hour on stove (or for up to 8 hours on low in crockpot) season to taste, sometimes depending on how wet the tomatoes were you can add some water, or vegtabel stock, but it usually creates a nice broth itself as it cooks down.
    I've done it with shrimp instead of sausage too, and added old bay to the mix, pretty good stuff!
     It freezes well and I usually only pick about a link worht of sausage out so that doesn't kill anything and all of it cooking togeher you kind of get the flavor in each bite.

    thats the only one I can give with out having my recipes near me while I'm at work.

  • I don't have a specific healthy recipe I like but I do have a favorite healthy website that I would like to share.  It's called sparkpeople.com and it's free.  You can do everything from count calories to keeping track of how much water you drink in a day.  It gives you a lot of different things, like simple exercises you can do at home, and my favorite thing on that site that I like is they have something called sparkrecipes.com, you can plan out your meals for a week and they have a bunch of healthy recipes you can chose from, then it even prints out a grocery list for you so you don't have to write down everything you need!
  • This is a Panera Bread copy cat recipe. It is based on their mediteranian veggie sandwhich only this is lower calories. :)

    • 2 slices whole wheat panini style bread (or whatever flavor you prefer)
    • 2 tablespoons sundried tomato basil hummus
    • 1 green lettuce leaf
    • 6 slices cucumbers (skin on)
    • 1/2 cup baby spinach leaves
    • 1 roasted red pepper , sliced into strips
    • 2 slices red onions (optional)
    • 2 slices tomatoes
    • 1 tablespoon crumbled feta cheese
    Wash and dry lettuce and spinach and set aside.
    Spread each slice of bread with hummus.
    Lay lettuce leaf on one slice of bread.
    Top with cucumbers, spinach, roasted pepper, onion (if using) and tomato.
    Sprinkle with feta cheese.
    Top with other slice of bread.

    This is the program I'm using for weight loss.  They have recipes too.  I've yet to try any but thought I would share.

    If you want a hearty and wholesome breakfast, this is a great way to start your day -Baked Pumpkin Spice Oatmeal
    Especially if you plan on doing a hard workout; you'll be amazed at much stronger you'll feel :) Oxygen often has great healthy and nutrient rich recipes that taste awesome.

    Looney Spoons has a great vegetarian chili recipe that has actually won me the title of "chili queen" at work haha I did alter the recipe a bit to add more veggies (and spices and sweet corn for a tex mex flavour).Everyone was so shocked when I said it was vegetarian and very healthy; funny how ppl think healthy means yucky :P

  • I have quite a few on a Healthy Recipe board on Pinterest. They're mainly from Skinnytaste but i am trying to branch out. However, everything I have made from Skinnytaste has been fabulous.

    Another recipe I love is from the South Beach Diet cookbook. 

    Five Spice Salmon

    Ingredients:

    • 1 1/2 teaspoons finely grated lime peel
    • 3 tablespoons fresh lime juice
    • 2 teaspoons extra-virgin olive oil
    • 4 teaspoons finely chopped fresh ginger
    • 1 teaspoon Chinese five-spice powder
    • 1/2 teaspoon sugar substitute
    • 1 pound salmon steaks, cut into 4 equal pieces
    • 8 cups fresh baby-spinach leaves
    • 2 cloves garlic, pressed

    Directions:

    1. In a 2-quart dish, combine the lime peel, lime juice, 1 teaspoon of the oil, ginger, five-spice powder, and sugar substitute. Add the salmon and turn to coat. Cover and refrigerate for 30 minutes.
    2. In a 3-quart microwavable dish, combine spinach, garlic, and remaining 1 teaspoon oil, tossing gently. Cover with plastic wrap and microwave for 2 minutes, or until the spinach has wilted. Drain and keep warm.
    3. Lightly oil a grill rack. Preheat the grill to medium-high.
    4. Remove the salmon from the marinade and place on the grill rack. Brush the salmon with additional marinade. Close the grill cover and cook for 4 minutes. Open the grill cover, turn the salmon, and brush with marinade. Close the cover and cook for 4 minutes longer, or until the salmon flakes easily. Discard any remaining marinade.
    5. To serve, evenly divide the spinach among 4 serving plates and center the salmon on the spinach beds.
