NWR: Vegetarian Recipes

Good morning, Ladies -

My best friend had a planned c-section last Monday and is still in the hospital from complications, but should be home this weekend hopefully.  I want to make her some soups and casseroles, so she and her husband don't have to worry about cooking.  She is a vegetarian, but I'm not, so I need some ideas!!  I know there are lots of you veggie lovers here on the board, so can you help me out?  What's your favorite vegetarian friendly soups and casseroles?  Bonus points for recipes!!  Laughing  TIA!

  • I make this a lot <CLICKY>  you can make them the night before you go to see them & just add the scallions. 

    Or here is my stuffed pepper recipe =] 

    Stuffed Bell Peppers:
    4 Bell peppers, cored. I usually just cut the top off and scoop out the seeds. 
    1 cup brown rice, partially cooked (My rice takes 45 minutes to cook, I cook it for 35-40 when making these)
    1 (15oz) can black or red beans, rinsed & drained 
    1/2 large onion, diced
    1-3 cloves garlic (depends on preference) minced
    Salt & Pepper to taste
    1 tsp each: chili power, cumin, and white pepper
    1/2 jar of salsa
    1 cup shredded cheese of your choosing

    Saute onions, garlic, salt & pepper in a skillet for about 5 minutes. In a bowl, stir together rice, onions, garlic, beans, seasonings & salsa. Scoop into peppers until just full. 

    Stand peppers in a small baking dish with 1/2" of water on the bottom. Cover with foil & bake for 25 minutes. Remove foil, cover with cheese & bake until cheese is golden brown, about 10 minutes.

  • I love this recipe (click) You can assemble it for them and then just tell them to freeze it until they want to bake it. It tastes just as good from the freezer as the day you make it! ;)

  • What about Spinach and Mushroom Lasagna? We make it and love it, I don't have a recipe, we usually just wing it. But it's super yummy!!!!
