In honor of my pending trip to Rome on Monday, I thought I'd share an Italian recipe that I learned while I was living in Italy for three years. I love pasta!!!

Share an Italian recipe that you make at home or a pasta dish, whether it be Italian or not!
La Carbonara
1 Package of spaghetti
a quarter of a lb. of pancetta (If you can't find pancetta, which is a problem for me, I use turkey bacon. It works just as well!)
2/3 eggs
A quarter of a stick of butter or margarine
Pepper to taste
Garlic to taste
Salt to Taste
Parmesan Cheese to taste (this is a must!)
- Cook the pasta until al dente. You don't want it completely cooked because you will be putting it over a flame after you've drained it.
- While the pasta is cooking, whip up the eggs in a small dish and add pepper and salt.
- Chop up the pancetta or turkey bacon and heat in microwave or over flame until cooked.
- When the pasta is done, drain it and set it aside.
- Use the same pot you used to cook the pasta to brown the garlic with the butter at a medium flame.
- Dump the pasta into the pot, mixing the garlic butter mixture into it.
- Add the whipped eggs and mix them into the pasta. You will have to mix it around a lot to make sure the pasta is covered. Just make sure not to let the eggs become completely cooked. You want the pasta to be a bit moist from the whipped eggs.
- Add the pancetta/turkey bacon to the mix and take off of flame.
- Serve. Be sure to add parmesan cheese once it's served!
