Wedding Invitations & Paper

A few questions...

I'm sorry if these are silly questions but I was lurking and starting thinking about things I don't know.  Our wedding is in September, so I have plenty of time.  

1. Do you hand write the addresses on the invitation envelopes or do you use labels?
2. Same question for the RSVP envelope?
3. Although I haven't decided on the exact wording of the RSVP card, I know I will be writing the number of seats reserved for each family and I will be writing the names of each person invited.  I bought DIY invitations but FI and I are debating just buying them online and returning these.  So my question is should I hand write the number of seats reserved and the name of the guests invited, print each individual RSVP card separetly, or stamp each card after printing in in bulk.
For example:
M________________________
we have reserved ______ seats in your honor

John Smith ____will attend ____ regretfully declines
Mary Smith _____ will attend ____regretfully declines
 

(this is not my final wording, just ideas I'm thinking of.)

    2) Typically the address is printed on the RSVP envelopes
    3) I would just have the blank of how many seats are in their honor...and hand write in the number.  In regards to DIY...Vistaprint has great deals, especially if you combine it with a groupon!
