NWR Pumpkin Recipe

I have finally made the swtich to grain free and this is one of my favorite recipes! Eat it atleast once a week.. They are more like crepes since it is made with egg, and I don't add the maple syrup to the batter.
Hope you enjoy!

I love them! Drizzled with a little real maple syrup :)

Oh, and I found the best results with making them small- only about 3 inches in diameter, they are delicate so it is easier to flip the smaller ones.

Contrary to popular belief you do not need grains to maintain a healthy diet. Especially with all of the GMO grains now a days, I have found it so much easier to maintain my weight  and fitness levels without grains weiging me down. Plus I feel a lot better too without all the bloat and such. Processed fods have not been a part of my diet for a long time, and this has just been icing on the cake. Whole fruits, veggies and things like greek yogurt have way better sources of complex carbohydrates than even whole grain bread.

Also from a fat-loss lifestyle standpoint- your body will actually store more of the fats you consume if they are consumed alongside simple carbs and starches.  It just made sense for the physical goals I have and my lifestyle.

  • I feel dumb but doesn't everything have grains in it?

Sorry for all the questions, I am just so curious.

lol no worries, questions are good :)

A lot of processed foods do have grain or grain by-products in them, hence why I stay away from them. On top of them just being unhealthy for you. I stick to fruits, veggies, meats and some dairy- all whole foods. I will have some rice or corn chips once in awhile, but I stay away from all wheat and gluten. Most grains have so much starch they are counter productive to losing body fat. I am not losing weight anymore, but I am having no problem maintianing my body and I didn't gain the normal 10 pounds I ususally gain when I have a cold, because I eat everything in sight!

No I don't deprive myself, I still eat icecream and frozen yogurt, chicken wings, bacon, and chocolate- i just watch that they are made from real food ingredients (not chemicals and by products) and I eat smaller portions of those things than I used to.

I probably consume atleast 2500- 3000 calories a day, just none of the junk!

GMOs are Genteically Modified Organisms. All of our crops are no longer pure grains, they are all chemically modified to resist disease and drout. Sounds great, but I do not see how we can expect to have crops that cause insects stomachs to explode after eating them and have no side effects on humans?  The offical jury (the FDA and such) is split on the harmfulness, but when isn't the government undecided between money and independent studies?

  • It you google paleo recipes they are grain free. Once you look you find there are actually a lot of options. It is a big adjustment for sure! I also had problems with bloating and that's why I changed my diet, and it's made a really big difference. It's also helped me lose weight.

  • My mom follows a gluten & casein free diet because she's found those two things aggravate her rheumatoid arthritis. So I've been familiar with grain free stuff for as long as I can remember :-) Also I grew up going to co-ops and farmer's market often.
