Otherwise I just take the pasta and start tossing in some balsamic and adding veggies-it's hard to go wrong!

My coworker gave me her hummus recipe a few weeks ago, but I still haven't tried it yet.  It seems pretty easy. 

1 can of Chick Peas-rinsed and drained
1/3 cup Tahini
1/4 cup lemon juice (freshly squeezed or bottled)
1/4 cup olive oil
2 cloves of garlic - chopped
Salt to taste
Black pepper to taste

Throw everything in a food processor and puree. If it's chunky add some oil and keep pureeing OR you can add 1-2 tablespoons of plain yogurt, it will make it really smooth. Off course you can substitute the dairy yogurt with a soy yogurt.

If it doesn't have that Tahini taste, add some more Tahini. And off course you can add more of each ingredient until it reaches the right taste for you. Be careful not to add to much of one thing.

I make a pasta salad with whole wheat penne, chopped red onion, chopped kalamata olives, arugula, balsamic vinegar, truffle oil (it adds an amazing savoriness, but you could swap in for olive oil just fine) and shaved parmesan.

I don't ever measure anything in this, but for the veggies it's basically 1/2 part veggie to 1 part pasta. So if I did 1 cup pasta, I'd eyeball it to around 1/2 cup olives, 1/2 cup red onion and 1/2 cup arugula. I like a lot of "stuff" in my pasta salad, so I'm heavy handed. I make sure to put the arugula in first so the heat of the cooling pasta wilts it a little bit. Finish with a  drizzle of oil, a good amount of balsamic (the pasta really sucks it up!) and a little bit of shaved or grated parm.
