I'm working on invitations at the moment, which means I also need to pick a menu! We have decided to do a dual-plated main entree of filet and arctic char. We also want to offer a vegetarian option, and I'm trying to decide what would be the most appealing.
Mushroom, tomato and goat cheese tartlet with balsamic reduction and micro greens
Layered artichoke ratatouille
Red Wine Wild mushroom risotto
Vegetarian pesto lasagna
Stuffed Shells with marinara or creamy pesto sauce
Wild Mushroom Risotto – wild mushrooms and truffle oil in creamy Arborio rice
We are thinking we'd like to go with the wild mushroom risotto, but I'd love to hear your opinions.
