Signature Cocktails/Virgin Drinks

At our wedding we are serving beer, wine, and champaign. We will also have a variety of sodas at the bar.
The meal is going to be plated and the waiters will also offer sweet tea or lemonade to the guests.
I thought it would be nice to have a signature cocktail.I love pomegranate margaritas and I think it will go will with our color scheme. Do you think this is a good choice?Sidenote: Can these be pre-maid to help speed up the process?
My FI does not drink and we will also have a lot of non drinkers at our wedding. Should we offer a virgin signature drink as well or just let them chose from the other drink options. Also do you have any suggestions for cute virgin drinks?
Do you think we should skip the signature cocktails all together?

  • Yes, they can be pre-made in pitchers that your servers can pour and that would speed up the process. I worked for a catering company in college and when we did weddings with a really limited bar menu they almost always premixed the drinks. 

    What about a pomegranate lemonade for the nondrinkers... it would still match your theme and be easy to make because you would already have the ingredients.

    I do think a pomegranate martini might be a better option. Vodka is much more neutral. Unless your dinner is Mexican themed, I personally wouldn't drink a tequila drink with it.

    Regular lemonade, regular iced tea, and the option to add a splash of pomegranate juice to each would be nice, too.

    Personally, I think that a lot of the pomegranate drinks end up tasting like cough syrup.  You can do a raspberry or blood orange margarita that has the same color.  As for the mocktail, you can serve the same drink as the signature, just without the alcohol and maybe a splash of tonic water.  All you have to do is have your bartenders premix whatever you want in the drink sans the alcohol.  Whenever a gust wants a drink, they just have to mix the two together.  Your non-drinking guests will appreciate the effort.
