Menu ideas?

We are planning a dinner buffet in July 2014. It will be warm if not downright sultry. So cool crisp tasty but filling is the idea. I have seen a million place settings but not one real menu! Please help. And of course we have a budget so cute mini things, like cold soup shooters are out, too much labor.

  • I have a friend who's also having her wedding in July (this year though) - outdoor tented reception, so the heat was definitely a concern. She's doing "upscale picnic" food - cold potato salad with a tasty vinaigrette, chicken salad w/ fancy touches (cranberries and walnuts, I think, though I'm not positive), etc. You can make it in large batches yourself or, like she is, have a caterer do it. Either way, it's filling food, shouldn't break the bank, and it's all chilled to counteract the heat.

  • why not have bowls of the cold soups available? like gaspacho and cold cucumber? you dont have to do the shooters (which would be a pita iwth a buffet anyway-who wants to carry a few of those around?)  you can serve fritatas, ceviche, quiche, tons of different salads-pasta salads etc...

    what has your caterer suggested you do?
