Could she greet people and hand out programs (if you have them)?  Kinda like an usher w/o walking them to their seats.

This is a chore. People know to grab a program if they want one. Guest book attendant is also a chore. I'd much rather just sit with my family than have to stand and greet people for half an hour.

The only honor roles are bridesmaid or reader.

You could just have her seated when your mother is seated. No need to give it a title or a spot in the program, but it would be a subtle and easy way to include her in the ceremony without being weird and forced.
