What's for Dinner?

I think I'm having leftover chicken over pasta with sun dried tomato alfredo sauce and veggies.

What about you ladies?  What's for dinner tonight?

    Possibly Green Curry with shrimp and veggies over rice and a salad. I'm lacking motivation so it could end up being a salad and sandwich night for me.

    the sauce sounds good peek!

    we're having Pollo in Potacchio with roasted brussel sprouts (for me) and broccoli (for him) over spaghetti noodles.  yum, pasta!

    I have no idea. I pulled some ground turkey breast out of the freezer this morning and I have leftover refried black beans. Any suggestions?

    Dinner? You mean I have to eat tonight?

    I have been way off the cooking at home wagon lately. I have the stuff in my fridge to make chicken cutlets in an herb pan sauce tonight....so maybe I'll get back on track.

    We're haveng black beans and rice with salsa and sour cream...  Kind of like a burrito in a bowl.  Delicious and really cheap.

    (Not so) homemade pizza. I can make crust in my bread machine, but I'm being lazy tonight, so I bought pre-made crust. Turkey pepperoni and spinach on my half, peppers and regular pepperoni on his half. Plus cheese, of course! Mmmmm, pizza!

    I am going to have butternut squash ravioli, I think.  I made them a couple of weeks ago and froze the leftovers for a quick dinner.  I will probably throw some chicken on the grill as well and have some leftover kale salad.  Yummo!

    probably whole wheat pasta with broccoli and peanut sauce. fast, easy and not terrible for me.

    or possibly creamy veggie soup.

    whichever sounds good when I get home. :)

    Nomm! I want all your meals...

    We're having roasted chicken with home-made BBQ sauce on it.  WIth a ceaser or greek salad (FBD gets to decide tonight) and some oven roasted veggies

    Yours sounds yummy, too.  I would totally make that if I was feeling a meatless night.

    ETA: For those who are interested, the kale salad is super easy and delicious.  I've served it to friends several times and they all rave over it.  Here's how to make it.

    Ingredients:
    Kale, washed and roughly chopped (I use 2 bunches)
    1 cup pinenuts
    1 cup dried cranberries
    Olive oil (probably about 1/4 cup)
    Salt (large pinch)
    Pepper (4 - 5 grinds)

    After letting kale drain in a colander for a few minutes, put it in a large tupperware container or zip lock bag.  Add the rest of the ingredients and shake until kale is coated with the olive oil. 

    FI and I like the salad best at room temperature.  It also keeps in the refrigerator for about a week!  It gets even better as it sits and the kale will turn bright green.

    Homemade pumpkin gnocchi sauteed in sage butter with sugar snap peas.  

    Still deciding on a protein.  No proteins sound good to me, but DH has to have meat with dinner.

    </div><div>FI and I are going to be meatless for a while.  We discovered that we've been blowing our grocery budget out of the water pretty consistently the last couple months, so we're hunkering down for the rest of the month to try to get back on track.  And meat is expensive, so we won't be having much for the next couple weeks.</div>

    Meat IS expensive.  I usually buy in bulk at Costco to save. 

    If there is a night that you really want meat, though, soups are a great way to use a little meat and feel fulfilled.  Also, meats that you can use for soups are usually more inexpensive.

    I try to do something without meat once a week.

    Let us know if you need some ideas for good meatless recipes.  :)

    I just had some leftover chicken, hominy and kale stew with a brown rice tortilla. My teeth still hurt from getting a cavity filled, so I can only eat on the left side of my mouth :|.

    Uhm... like a press to cut out the ravioli?  No.  I use my pasta maker to roll out the sheets of pasta, then I just put about a TBSP of filling spaced evenly down the sheet, fold it over, and cut with a knife.  Then I just press the edges with a fork.
