Anyone have a great recipe? I want to make one for Thanksgiving this year, to give everyone a break from the assortment of pumpkin desserts I plan on making.

Yes, I know how to google, but I have no idea which to pick, so I'm asking for your expert advice.

    Too bad I'm not southern or ever in as good of mood as she seems to be in :) And the love affair with butter would have to be a sometimes-sizzling romance with country crock :)

    How many pecans does an entire pie require? I bought chopped pecans the other day and a tiny bag cost like $6.

    Vic, buy the whole pecans and chop them yourself. Doing 3 or 4 bags will cover the cost of a cheap chopper. I got the ginormous bag for $3.

    I usually use allrecipes.com and pick the one with the highest number of stars, although I agree with pp that for a southern recipe like this, Paula Deen's is probably great.

    I have an amazing pecan pie recipe that my mom developed.  It's at home though.  I'll try to remember to post it later, but if I forget, just remind me.  It's really good.  And really easy.

    I, too, want to be Paula Deen. My friend in Savannah covers her employee insurance benefits, and she was at her house last week for a meeting and said it is magnificent.

    I second the Paula Deen recipe. My mom makes really good pecan pie, because she doesnt just put pecans on top. Some people like lots of goo. We do not. She adds more pecans reduces the goo by half. Its very yummy!

    This is copied from Southern Living; it is usually the one I make (this or Better Homes and Gardens, which I can't give you until I get home).  Hard to go wrong with Southern Living, though!!

    The best refrigerated piecrusts, to me, are Pillsbury.

    Ingredients

    • 1  (15-ounce) package refrigerated piecrusts
    • 3  large eggs
    • 1  cup  sugar
    • 3/4  cup  light corn syrup
    • 2  tablespoons  butter or margarine, melted
    • 2  teaspoons  vanilla extract
    • 1/4  teaspoon  salt
    • 1 1/2  cups  pecan halves*

    Preparation

    Unfold and stack 2 piecrusts; gently roll or press together. Fit into a 9-inch pieplate according to package directions; fold edges under, and crimp.

    Stir together eggs and next 5 ingredients; stir in pecans.

    Pour filling into piecrust. Bake at 350° for 55 minutes or until set. Serve warm or cold.

    * Chopped pecans, a less expensive choice, may be substituted for the pecan halves.



    Southern Living, NOVEMBER 2002


    Here's another version, with chocolate and bourbon, also from Southern Living:

    Ingredients

    • 1/2  (15-ounce) package refrigerated piecrusts
    • 1 1/2  cups  chopped pecans
    • 1  cup  (6 ounces) semisweet chocolate morsels
    • 1  cup  dark corn syrup
    • 1/2  cup  granulated sugar
    • 1/2  cup  firmly packed brown sugar
    • 1/4  cup  bourbon or water
    • 4  large eggs
    • 1/4  cup  butter or margarine, melted
    • 2  teaspoons  cornmeal
    • 2  teaspoons  vanilla extract
    • 1/2  teaspoon  salt

    Preparation

    Fit piecrust into a 9-inch deep-dish pie plate according to package directions; fold edges under, and crimp.

    Sprinkle pecans and chocolate evenly onto bottom of piecrust; set aside.

    Combine corn syrup and next 3 ingredients in a large saucepan, and bring to a boil over medium heat. Cook, stirring constantly, 3 minutes. Remove from heat.

    Whisk together eggs and next 4 ingredients. Gradually whisk about one-fourth hot mixture into egg mixture; add to remaining hot mixture, whisking constantly. Pour filling into prepared piecrust.

    Bake at 325° for 55 minutes or until set; cool on wire rack.

    I would be in heaven to go to PD's house. Heaven. Especially at Christmas. Oh, and Rachael Ray too. I know a lot of people find her annoying, but I think that's part of her charm :)

    I found them at a local store, Vic, they were on sale for Thanksgiving. But I'm sure Sam's Club would have them for less than the average grocery store (I don't have a Costco membership, so I have no idea how their prices compare).

    I would also think the generic brand bags would be fine (and much less expensive). A nut is a nut, right? :)
