  This brunch event will be hosted by the groom's parents.
  So the groom's parents get invitations and the groom's parents decide who will be on the guest list and how those invitations will be mailed, etc.
  
  An invitation to a day-after event hosted by the groom's parents certainly does not go in the envelope with the invitation from the bride's parents to the wedding and reception.

  It doesn't have to match your invitations. The groom's parents can choose whatever they want. The invitation should indicate the level of formality; I'm doing a barbecue the next day and it's super casual, so I'm getting imprintables with a barbecue motif. However, if we were going to a nice restaurant, I'd get a nicer invitation.

  You have a couple of options.  You can include an insert with the invitation, sort of like your directions card, that says "So and so invite you to join us for a farewell brunch at blah blah" and put directions and info on there.  You could also send out a separate invitation, just a simple DIY kit, from FILs with all the info.  This would be better if it is more formal and they need a separate RSVP.

  I've seen the information included in the OOT gift bag when guests check into their hotel. It works well, but there are two downsides: you don't get an RSVP or accurate count, and people who aren't staying in the hotel don't hear about it. But that's the only way I have seen it.

  we are doing a "welcome reception" the night before our wedding and my FI and I are hosting it.  We are including an insert in our pocketfold invitations informing everyone about the event and then there is a place on the RSVP card where they can let us know if they plan to attend that party or not.  We needed at least a rough idea of numbers for food. 
  
  I don't think that you need a separate invitation unless your FI's parents feel strongly about that.  I have been to several weddings that had brunches the next day and there was never a separate invitation.
