I've seen nice ones done at the mansion at FDU in Madison. Further north, the NJ botanical gardens are nice.
some advice i got from my photog which was very helpful... i got married on a gorgeous day - 85 degrees, sunny, not a cloud in the sky, but with that, came pictures outside and squinting with all the sun. so the advice he gave was to close my eyes, he would count to 3 and then i would open them when he got to three. closing your eyes right before taking the picture helps you not to squint and keep your eyes open for the picture!

Our photographer took us to the Rutgers Gardens for our engagement photos (which will be used in our guest book). It was awesome and we actually weren't in the garden-y area. We took photos by different pathways lined with trees, with the two of us on a tree that had fallen (very woodsy) and this great spot where there is a stone wall right before a forest area - they came out unbelievable.
The gardens themselves are gorgeous too for traditional "pretty" pictures.
I have also heard Monmouth University is a great place for photos (I'm been to campus and it is very pretty).
