So far I've been boring too and only seasoned them with salt and pepper, but you could do pretty well anything.
Our friends got an Edible Arrangement on the weekend and it had kale covering up the styrofoam that all the fruit skewers were stuck into. To most people it was just a garnish/covering, to me, it was chips. Everyone thought I was wacked cooking them up, but they were enjoyed by all!

Just an FYI though, in my experience, they don't keep well. I made up a whole bunch one (like, literally, a bunch) and put them into a tupperware type container thinking they'd keep. By the next day they had lost their crunch and were weird. So, only make as much as you think you'll eat in a sitting (which is lots).

I make kale chips with that recipe too! My advice is to try to cut/tear the kale up into pieces that are all approximately the same size. If you get lazy and have some big and some small, the big ones end up chewy or the small ones end up burnt.
