Craving dinner already...

I threw together a quick slow-cooker meal this morning before leaving for work. Now, sitting here at my desk, I swear I can almost smell it. I can't wait to get home to the smell of good food, and having an already prepared meal waiting for my son and I.
What's your favorite slow-cooker/crock pot meal? Any "secret" ingredients you swear by?

    My favorite 'OMG WE HAVE NO TIME TO DO ANYTHING' crock pot meal is 2 frozen chicken breasts, a can of chicken brother, and random seasonings (whatever I can find).
    Then I just make some rice and vegetables when I get home, and we have an easy healthy meal.
    My favorite 'complicated but oh-so worth it' recipe is (HERE).

    Another quick favorite is THIS.

    This is from Pinterest. I've have cooked this meal several times, each time varying the stuff I add or how much.

    I've added cabbage as well as more gravy mix. It is delicious, one of H's favorite meals.

    1st link didn't work, but I'm drooling over the second one. This is a must make for us! Thanks for sharing!
    Today's masterpiece (90% of my crock-pot dishes are made up as I go) included:
    4 chicken breasts
    1 can cream of mushroom soup
    some water (which I mixed with the mushroom soup to thin)
    half of a sweet onion, cut into chunks
    1 packet of Lipton Onion Soup mix sprinkled over top.

    That's my go-to... the soup mix. I actually found a cook book of recipes that are made with the different varieties of Lipton soup mixes. Love.

    That pot roast looks amazing...

  • My other favorite is the most simple:
    1 cup water
    Chicken legs (drumsticks) - as many or as few as you like/can fit
    1 chopped sweet onion
    cover with 1 bottle of Sweet Baby Ray's BBQ Sauce.

    That's it, and it's incredible.

  • OH, my... that plane ride does not sound like fun at all! Fingers crossed for a safe and easy flight for you!
    And yes, dig out the crock pot! I use mine a ton this time of year, partly due to laziness and partly due to the fact that I think there's something really welcoming about coming in from the cold (Wisconsin winters are brutal) to a warm, yummy smelling meal. Reminds me of home. :)

  • The other day I tried a Pinterest recipe that you put a bottle of beer, salt, pepper, garlic salt, and oregano in the crock put. FI really liked it and I thought it was ok. The chicken broth plan sounds like a winner.

  • I use my crockpot alot this time of year.  I like a recipe I got from kd....crockpot chicken taco chili from skinnytaste.com  I think I will make it this weekend.

    Rotel diced tomatoes and chilies
    corn
    salt, pepper, and fresh cilantro

    All served over rice and topped with shredded cheese/guac/sour cream a la Qdoba

  • The longer you watch chicken brother the funnier he gets. He needs a theme song to dance to.

    Today, I put a chicken breast, some baby bellas, and a can of cream of chicken in the crock pot with garlic salt and some pepper. We serve it on bowtie pasta.

    Tommorrow I plan on doing one chicken breast with some seasonings, a big can of potatoes, a smaller can of carrots (H likes them, I'd pass), and a can of cream of chicken. I'll add a little broth if I have some leftover from other things, but not always. We serve this on rice.

    Those are definitely the easiest crockpot recipes I've tried, unless you count frozen stuff that I make ahead, thaw, and dump in, like potato soup. We eat crockpot dinners all the time. I work 11:30-8, so my lunch is really dinner. H gets home about 30mins before my break, and I live super close to work, so he cooks the rice or pasta and we have time to eat togerther at home.

  • *Pollo in Pottachio* from skinnytaste.com. The chicken falls apart before you even take it out the crockpot, and it's unbelievably tender and delicious and wonderful :)

  • I have 2 recipes that are my go to during the week in my slow cooker, they're essentailly the same but with different meat:

    Wanna-be tortilla soup
    Can of Rotel
    Black Beans
    Pinto Beans
    Corn
    Chicken
    Green Chilies
    Various seasonings
    Let cook in the slow cooker all day on low. When I get home shred the chicken and serve with sour cream, shredded cheese and FI eats it as a dip with chips, though, you're supposed to just crunch up chips and put them on top.

     "Taco Soup" from WW, but a few changes
    Browned, drained ground beef
    Can of diced tomato
    Can of Corn
    Can of Fancy cut green beans
    Can of black beans
    Can of Pinto Beans
    Pack of taco seasoning (or, I have my own that I made)
    Toss it all in the slow cooker and eat the same as above - FI also is convinced this one is a dip. UGH!

    OR not a slow cooker, but on Pinterest I got this one:
    2-3 boneless/skinless chicken breast
    Fresh green beans
    a few red potato, chopped into bit size pieces
    Lay chicken in the middle of a 9x13 pan. Arrange green beans on one side and potato's on the other.
    Melt a stick of butter and pour over the top. Sprinkle a packet of italian dressing over the whole mixture. I then cover in foil and put in the fridge (I arrange it all in the AM). When FI gets home, he puts it in the oven, 350 for an hour.

  • Ohhh, I love skinnytaste!Her stuff is always amazing. Haven't tried a bad recipe yet.

    I have some veggies and chicken that need cooking, so my dinner tonight will consist of stir fry. Though I've been having the itch to break out my crockpots lately. I'll definitely have to try a few of these.
