Re: Saturday Chat

  • Watch out for spices too. They'll get ya.

And I'm off tomato now too because it was givin' me the reflux.

And I usually make like... a stew in the crockpot and eat it for two weeks. Seriously, last week and this week, I'm having the same thing for lunch at work every day. I made a big pot of quinoa in the rice cooker and then threw chicken, lentils, carrots, walnuts, garlic, curry, five spice, salt, rice wine vinegar and chicken broth into the crockpot overnight. In the morning, I shredded the chicken that hadn't fallen apart on its own. For lunch, I just put quinoa, frozen peas and the stew in a container. Fast, easy, tasty. Stews are my thing.

I also like making summer rolls. I sauté vegetables and strips of tofu, wet some rice paper and roll everything into it. Super easy.

If you don't have a rice cooker yet, I'd highly recommend it. They can cook quinoa, amaranth, et cetera in addition to rice.

For breakfast, I blender up smoothies like a damn champ, so that's another good thing to have for fast meals.

Explore outside of your normal cuisine for gluten free stuff. Indian, Ghanaian and Persian food are typically pretty gluten free, and Mexican's easy to make GF. Watch out for soy sauce though, ugh.

Omg, I am going to have to try some of this stuff, and just pray I don't burn anything. LOL. I do have a rice cooker, did not know I could make quinoa in it! Do I make it just like I would rice?

I discovered Thai food because someone said lots of Thai  is also gluten free, I will have to try those other suggestions too! I learned about soy sauce and my heart dropped... until I found gluten free soy sauce, which I actually like better!

Yep, exactly like rice! If your rice cooker has cooking options, use the same setting you'd use for white rice.

And you should try Bragg's spray. I like it even more. They also make awesome nutritional yeast, which is what I use instead of parmesan cheese.
