I don't feel like cooking tonight so think we'll have fish sticks, lol, but I was hoping someone had any great recipes to share for when I do feel like cooking! This isn't a meal, but it's soooo delicious! It's called Cowboy Caviar - I hate the name, so I just call it salsa bean dip.

I was trying to figure out something fun to add here, but honestly all I can think of is pizza & margaritas. With escrow coming to a close, renovations are looming and I know there will be pizza and (lots) of margaritas in my future.

While searching around for healthy recipes, I came across this one and remember I've made this before and it's delicious! I'm actually making it tonight now

Secondly if you aren't a fan of salmon you can easily use any other fish you want, I would just recommend staying with a firm fish because if you use something too delicate it will just disintegrate in the packet.Happy eating
