  • Hiya! How are you doing? While we're on the topic of food, I am making lemon and parmesan risotto tonight. I've never made a risotto before... let's hope it's not too complex.

  • Expat - They own the house together and are upside down in the mortgage at the moment. Neither can afford to buy the other out, nor pay the remainder left on the mortgage if they sell - IF it even sold. Everything is for sale on our block. She wants to stay in the house because she's in nursing school (we'll see if THAT lasts) and we only intended to stay a short while, but plans didn't work out as they were intended to, and she hasn't kept her end of promises she made to get us to stay so she didn't have to find roommates, and that is why I work 4 skrillion hours a day now, to get us out of here ASAP.To tell the truth, we know there are certain bills she hasn't been paying, and we're kind of hoping, at this point, that a lien is put on the house (AGAIN!) and it just gets taken.Should that happen, his credit would be wrecked, but he and I could get an apartment under my credit (assuming we have saved enough money by the time the house getting taken away inevitably happens), and once we are married, we can live on base, and he's doing a full career, so we will have a worry-free place to live for at least 10 more years, plenty of time for his credit to recover. Her? Well, up hers.Ahem. Long story, my bad!

  • Well, it's a long story so I will do cliff notes: My position (which I adore) is funded by a grant. The grant is up for renewal next July. Other grants were advertised, so I asked the lady who administers the grants if ours would be renewed or if I should apply for another. She advised that ours would be renewed. My boss and her boss went in to discuss the renewal today, and yeah, it's not happening. Apparently the woman who told us that has since left, and she had the wrong information. On the upside, my boss' boss is very supportive of me and apparently came out of the meeting saying he would find other funding because he wasn't going to lose me, as he has a 'vision' for a research team where I am the manager, once I finish my PhD. Visions are great and I love that he supports me, but what I need is job security and funding for next year. The annoying part of all of this is that I'm now doing my PhD with work, so if I leave before finishing, I also leave behind my PhD.
  • Rissoto always seems like way more work than than the end results warrants.hmm, that seems like an awfully awkward sentence.I get to go through and file a 3 foot tall stack of H's paperwork from the past 18 months tonight.  I believe bourbon will be involved.  Losts and lots of bourbon.

  • Yes, now I'm really quite hungry. I should be stuffed, though. We went out tonight to celebrate FIL's 40th year since he joined the tax bar - kind of like the legal bar in the States, but for CPAs in Mexico. What can I say, we'll find any excuse for a party ;) Anyway, just to torture you, here's what I had: - Mussels - Cheese, tomato, and avocado stacked up with a pesto sauce - Beef chop with mushroom sauce and a tiny side of ravioli - Red wine - Chocolate something for dessert I'd really like to be back at dinner right now, thankyouverymuch...

  • hi Alix. Sorry I was away, had to do "work".  Sheesh.  Darned residents cutting into  my knotting time. Now I want Taco Bell.  We don't have one here, so I think tomorrow that's what DH and I will have for dinner.

  • Eek that sucks - at least he's supporting you and trying to do what he can to keep you though, that's always a good sign, no? Yep, Taco Bell is good old Mexican-style fast food. Yum.

  • TJ, that REALLY sucks. I'd be tempted just to hoard all your cash, quit paying the mortgage, and let the bank take it away...
  • TJ you need to get a commode for your room so you don't have to leave to go potty.
  • I don't think I saw any taco bells when were were in the states. Or, if I did, we didn't eat at one. Maybe if we go back, I'll have to try. And Alix, you're right- it was bittersweet because it's lovely he has this great plan for me and I know he'll do his best, but all of the other funding rounds for next year have already closed (which we did not enter on that advice). Even if he can pull funds from somewhere, I don't think my position will be quite so fantastic in terms of international travel etc as it has been. Need to milk the funding for all it's worth until it expires in July, in any case! I was previously intending to go to Hawaii to present next September, but given funding then might be an issue, I'm looking at a conference in Singapore in May, or one in Edinburgh in June.
  • Taco Bell side note: In Mexico they consider Taco Bell to be Tex-Mex or just American-style Mexico food. It's not really reflective of how we eat here. Example: We do eat tons of tacos, but the tortillas are soft, and lettuce and tomatoes are not used as toppings. We use salsas and squeeze lime juice over them instead. Yummy!
  • Since we're talking food. Dh and I didn't get to spend our anniversary together :( I was thinking that when I go see him this week we could maybe go out for dinner, but money's kind of tight at the moment.Anyone have any nice but fairly cheap meal ideas? We love thai food but I haven't cooked much of it. Maybe I'll search for easy thai recipes... hmmmm.
  • Expat - That's pretty close to what we'll be doing. As soon as we're certain we can afford a place we like, moving expenses, deposits, insurance, etc, we're out of here. Giving her reasonable time to find some roommates and then that's it, she's on her own, period. We know the house will get taken once she's in charge of it. Oh, well.The bank should take it anyway, this house is STUPID. It's got 4 bedrooms, but only one of them is a reasonable size, and Buddy and I don't even both fit in the stupid kitchen at the same time and I forget what counter space, both in the bathroom and the kitchen, even looks like, and there's no breakfast nook, but the dining room area is set up in the weirdest, most unusable way. I haven't eaten a meal in this house that wasn't off my lap ONCE. Stupid house! WHO WOULD EVEN BUY THIS EFFING THING.Sorry. It's just SUCH A STUPID HOUSE.

  • Sadly not Amrs, any funds that haven't been spent by July will be taken back by the grant foundation. Thus, spending spree from now until then- and lots of PhD focus so that I can have at least the bulk of it done should I need to work elsewhere. TJ, that really sucks, and you must be a very patient person. Colleen, that also sucks! Thai food isn't that difficult to make, actually, provided you can get all of the ingredients. It's almost cheaper to purchase it elsewhere than to make it if you don't already have all of the spices and condiments required (we have cupboards and fridges full of all of this stuff from asian grocery stores, thus why we have made it!).
  • TJ - Again, that sucks! I can't imagine how frustrating that must be. Especially if the house itself is poorly designed. I'll quit complaining that I don't have a back yard for Oscar now ;)
  • I love seafood (I'm a Newfie remember, lol).  Dh likes some seafood.  I think halibut may be one of teh things he likes.  I might have to check that out.   The nights are chilly, so the stew thing might also work.Maybe I'll just make sandwhichs and we can have lots of sex. That sounds easier.
  • Yep, if all else fails that sounds like a fabulous second option.
