Chicken Recipes??

Anyone have any good chicken recipes?? Or any good recipes period. I am more of an appetizers girl. I make great appetizers, but when it comes to entrees. No creativity. I need to start cooking again. Any suggestions would be great!!

    one that I've made that I like:Sweet and Salty Chickenpreheat oven to 4002 chicken breasts, pound them thin, place them in a baking dish (like an 8 x 8 brownie dish is what I use).put a spoonful of apricot or peach jelly on top of each chicken breast.pour about a half cup of soy sauce on top of the breastsbake for about 30-40 minutes (check them at the 30 minute mark) until they're done.I have no idea what sides to pair this with though. I haven't had any success finding sides I like. I suck at sides.FI's best recipe:Margarita Chickensoak chicken breasts in margarita mix for at least an hour, preferably a few hours.grill for a few minutes on each side until cooked throughfor the last couple of minutes on the grill, reduce the heat, then put a lot of pico de gallo on top of each chicken breast, then lots of monterey jack cheese. they should be covered in pico and cheese.after the cheese is melted, remove and let sit.I usually pair this with black beans and salad and guacamole. this is a crowd-pleaser.

    I take 3-4 chicken breasts dice and cook with a little olive oil and tonys once the chicken is cooked I add in onion, can of black beans, can of corn drained and a can of rotel and simmer for 20 minutes and serve! I top with shredded cheese and use tortilla chips to dip in as well, it is really easy to make and fast too, DH loves it

    Are you looking for quick and easy or more in-depth?My go-to for quick and easy is lemon chicken.Dredge chicken breasts in flour seasoned with salt and pepper - heat some olive oil in a skillet and sautee chicken in it until cooked through -about 4 min on each side (juices will run clear).  I usually pound the chicken out before cooking so they are an even thickness.Then take chicken out and whisk about 2 cups of chicken broth (or water with a chicken boullion cube) and about 2 tbsps lemon juice. into the pan.  let it simmer and thicken a little.  Put chicken back in and cover - keep simmering (on low) until the chicken is heated through again and the sauce is desired thickness.I serve with a tossed salad and brown rice, put chicken on rice and spoon sauce over.  Super easy!

    2-4 chicken breastsmarinate in rosemary and orange juice for about an hr, then cook on non-stick pan till tender =) use the remaining marinate for extra flavor. side of steamed rice and veggies =)

    If you want something a little more "fancy" yet still easy, try sun-dried tomatoes and goat cheese stuffed chicken.  I've been such a sun-dried tomato fan lately because it just makes every dish taste so yummmyyyy!  All you do is just pound out the breast of chicken to make it a little thinner, season it with some salt and pepper, then spread some goat cheese (or any cheese you like really) and put some sun-dried tomatoes (the oil packed ones) and roll it up.  Place it in a an oiled dish and bake it.  You can serve it with mashed potatoes or rice and some veggies.  Also, a sauce I love to top all this with is a super easy cream sauce.  Sautee some onions and garlic, pour in a cup of chicken stock and a cup of heavy cream and you can add some frozen peas if you want.  Season to your liking (basil, salt, pepper, add some heat if you want with chili flakes, whatever you like).  If you want to thicken up the sauce you have to melt some butter in the pan and add flour and mix it before adding the chicken stock and cream.  I wrote this quick but hopefully you get the gist of it, and if you want it to be more detailed just let me know.

    Chicken broccoli rice casserole Chicken (diced) cream of chicken soup chedder cheese seasoning of your choice broccoli flowerettes Rice Cook everything seperate, then combine in a casserole dish top with half cup cheddar cheese and bread crumbs bake on 350 for 20 minutes

    I have made that same dish too Eboix, but I put picante /paste sauce instead of rotel.

    that chicken rice casserole bootsy posted sounds like something DH found to cook...only it's just chicken and broccoli and cheese, no rice. SO good.

    Ditto pinkypoo's recipe for stuffed chicken! SOOO delish! My DH loves jalapenos so I also stuff chicken with cream cheese, shredded cheese, and diced jalapenos. Just bake for about 20 minutes at 350.     My favorite is to take crushed up cornflakes and cover the chicken breast in it (kinda like shake and bake style).  Put the cornflakes in a bag and crush them up (I usually add salt/pepper, too).  Dip the chicken in water, then shake the chicken in the cornflakes, then place on a baking stone/sheet/etc.  I usually top it off with a little bit of butter.  Bake in the oven on about 350.I then make it with mashed potatoes and white gravy.  It turns out really good.  :)

    good stuff all.... giving me ideas for dinner tonight!  :) Here's one of my go-to recipes that is always a pleaser: Chicken Cacciatore: 1 lb to 1 1/2 lb chicken breasts (you can leave them whole or slice them up if serving to a group of folks)1 medium onion (usually I use a white onion; red onion works too)2-3 bell peppers (green, red, yellow, whatever is on sale that week)1 small carton of sliced mushrooms (or can of shrooms)Cook all of the above in about 2-3 tablespoons of vegetable oil, until chicken is brown and veggies are tender.Add a can of tomato sauce (or small jar of marinara), can of stewed or diced tomatoes, and seasonings (garlic powder, salt, pepper, crushed red pepper, and oregano).  Bring to a boil then reduce heat and simmer for 8-10 minutes.  I usually serve with white rice, but pasta works too if you are slicing the chicken.
