Need some ideas...

...for 1 or 2 somewhat healthy, leftover friendly meals I can make on Thursday to leave with FI for the weekend.  I'll be gone this weekend and since he's paying for my gas to get home and working all weekend, I thought it would be nice to leave him some quick to reheat meal options.  My first thought was chili, but he doesn't want that.  And no, he doesn't have any better ideas ;)For the record, FI IS perfectly capable of feeding himself, but since he's working all weekend he's likely to eat out a lot, which our budget doesn't need.  Plus we're both trying to eat healthier.  So I thought it would be nice, since I have the time and ability, to do this for him.

  • Stir fry is a fairly healthy and easy to reheat dinner.  You can add whatever veggies you want and serve it over brown rice or whole wheat noodles.Lasagna is also easy to reheat, and if made with low fat cheese isn't awful.  You can add spinach for veggie content, too.

  • What about some whole wheat pasta and a couple of different sauces? He could heat up the pasta mixed with whatever sauce he feels like. And pasta keeps pretty well. Keep some pre-cut salad on hand and he can eat that with it.

  • You could pre make a crock pot roast (or chicken).  Just have it all seasoned and ready and he can turn it on one day before work.  And have leftovers for the next day at lunch time.Not exactly healthy, but chicken enchiladas are always very good as leftovers.

  • soup is always good, sometimes even better in the couple days after. You can make them as healthy as you want (ff half and half or skim milk, etc). or you could cook up some meat, rice or pasta, veggies, and some sauces and he can put them together however he wants.
  • Honey Curry Baked ChickenPreheat oven to 350F/175C. 2/3 cup/150mL butter, melted 1 cup/250 mL liquid honey 1/2 cup/125 mL prepared mustard 2 Tbsp/30 mL curry powder 2 lb/1 kg chicken pieces, skinless Combine first four ingredients in a baking dish.Place chicken in the pan, meaty side down.Bake 50-60 minutes, covered, until no longer pink insideServe with a side of brown rice and steamed veggies! :)
  • We just had spaghetti, so he might not be into more pasta, but I'll definitely run that by him.  We just had a roast so he probably won't want that either.  Gah!He DOES love stuffed green peppers, and I never make them because I don't like them.  That's a good idea!

  • You could make up a small lasagna, freeze it and leave instructions for him (oven at 350 for 45 minutes, or whatever.) Or I always make mini shepards pies, which is basically the same ingredients as a regular shepards pie (ground beef, a few peas or carrots and potatoes) but in a small tart shell. You just cook the beef and pack it into the cups, top it with the mashed potatoes and cook it in the oven. They freeze great and it just takes about 15 minutes in the oven to warm them up again. GL! And that's so nice of you to do that for him!
  • I make an amazing casserole from a WW recipe with ground chicken, grilled eggplant, a chunky tomato sauce, and cheese - it reheats really well. Let me see if I can find the recipe!
  • Moussaka - I usually use sweet potato layers as well as eggplant, and put lots of carrots in the meat/tomato sauce. Make an easy and fairly healthy bechemel sauce with a tablespoon of butter, 2,5 tablespoons of flour, and a litre of skim milk. Let thicken, and add nutmeg. Layer veggies, bechemel, meat sauce, and bake in the oven. Yummy!

  • I also vote for turkey meatloaf. I have a great recipe where you mix in diced peppers and onions. It's amazing.

  • Wow, too many good ideas.  I'm making a meal list for next week too ;)I wish we had more freezer space and I'd just make a bunch of stuff and throw it all in the freezer so we'd have something quick, easy, and healthy on lazy days.

  • Pasta is always good and easy.  Pizza.  Quesadilla.  A pasta salad of some sort.  I actually like ribs left over, they're not the healthiest, but they're not the worst either.I like having a bag of salad in the fridge.Left over taco meat for a nice hearty taco salad.Chicken salad for chicken salad wraps.  Easy AND quick for him.

  • I made this a couple weeks ago.  I took it to work a couple nights and it was pretty good left over.  8  ounces  uncooked ziti 1  tablespoon  olive oil 1  cup  chopped onion 1  cup  chopped yellow bell pepper 3  garlic cloves, minced 1  (14.5-ounce) can diced tomatoes with basil, garlic, and oregano 1  (10-ounce) can Italian seasoned diced tomatoes (such as Rotel Bold Italian) 4  cups  baby spinach 1 1/4  cups  (5 ounces) shredded, smoked Gouda cheese, divided Cooking spray Preparation Preheat oven to 375°.Cook pasta according to package directions, omitting salt and fat. Drain well.Heat the oil in a Dutch oven over medium-high heat. Add onion and pepper; sauté 5 minutes. Add garlic to pan; sauté 2 minutes or until onion is tender. Stir in tomatoes; bring to a boil. Reduce heat, and simmer 5 minutes, stirring occasionally. Add spinach to pan; cook 30 seconds or until spinach wilts, stirring frequently. Remove from heat. Add pasta and 3/4 cup cheese to tomato mixture, tossing well to combine. Spoon pasta mixture into an 11 x 7-inch baking dish lightly coated with cooking spray; sprinkle evenly with remaining 1/2 cup cheese. Bake at 375° for 15 minutes or until cheese melts and begins to brown.

  • stuffed whole wheat shells... with spinach, cottage cheese and lowfat mozz cheese. We make a slew of them, freeze them, then pop them in the oven with a jar of spaghetti sauce. They are fabulous! I got the recipe from sparkpeople.com

  • J&K - does he like sloppy joes?  I make a shepherd's pie with mine instead of sandwiches, and it reheats super well.Let me know and I'll tell you how I make mine - I'm embarrassed to call it a recipe, it's so easy.
