  • Veggie lasagna.  Saute spinach, artichoke hearts, mushrooms, onions & a little garlic.  Season to taste.  Make the lasagna the way you normally would, but use the sauteed veggies in lieu of ground beef.  Another trick - you can sub cottage cheese for ricotta in the lasagna.  Pick whichever meets the healthy & budget requirements.  I do tomato sauce from scratch, too, but you don't have to.ChiliI make grilled chicken caesar "sandwiches" that FI loves.  marinade some chicken breasts in 3 T italian dressing, 2 T caesar, and 1 tsp Emeril's Chicken Rub spice mix (or something close).  Try to marinade over night.  Grill, slice.  Make a salad of spinach, red onions, & tomatoes.  Add chicken & some caesar dressing.  For bread, you can use actual bread, pizza crust, pita pockets - whatever you like best.  We use pizza crust.  Spread with a little pesto, put the salad on, add some mozzarella cheese, fold crust in half to make a sandwich, and broil just until the cheese melts.  You can use lowfat caesar & cheese.  (The salad keeps really well in the fridge & is awesome cold the next day, too.)

  • Chicken fried rice is fairly healthy and it's leftover friendly.  It's also really easy to make.Make brown rice a day before you plan to cook the dish.Cook chicken in whatever fashion you like.Put some olive oil in a pan and throw the rice in.Throw chicken in.Scramble eggs and throw them in.  Throw veggies in.Pour in soy sauce, garlic, and salt and pepper to taste.
  • J&K, if he likes eggplant, it is good with the addition of roasted eggplant, too.

  • We love this lasagna recipe: http://www.epicurious.com/recipes/food/views/Lean-Lasagna-230145 By using whole wheat noodles, ground turkey, and low (or no) fat cheeses, it really helps in the healthy category. I mean, it's still lasagna, but ... I make it every time I bring a meal to someone (new baby, illness, etc.). It always goes over really well.

  • heehee..... I make it at minimum once a month. I wish DH would eat it. But that's more goodness for me. Since I'm lazy, I use the prepared mashed potatoes - Bob Evans/Country Crock, etc. For sloppy joes part: 1 lb ground beef1/2  diced onion1 can Manwich sauce or Heinz sloppy joe sauce1 can mixed vegetables, drained (can also use frozen or use veggies of your choice - I've used frozen peas and corn, canned lima beans and green beans, and fresh carrots chopped - the fresh carrots just need to go in earlier so they can cook longer)1 TB or so Dijon mustard1 TB or so ketchupWorcestershire sauceBBQ sauce, if desired (I prefer Country Bob's, which is a steak sauce, but this last time I used a BBQ sauce)Brown ground beef with the onions. Drain. Add in Sloppy Joe sauce and vegetables (if using frozen veggies or fresh carrots, you may need to add liquid - if so, use a small can of tomato sauce). Stir and lower temperature to simmer.  Add mustard, ketchup, Worcestershire sauce, and BBQ/steak sauce as desired or to taste.  Let meat mixture simmer.  Variation:  If making for sandwiches, you can toss in a few handfuls of alphabet pasta, but be sure to add in the extra liquid and let it simmer longer.Spread mashed potatoes on the bottom and sides of a casserole dish (2 qt size or medium sized fairly deep dish - not a pie dish!). Pour sloppy joe mixture into the casserole dish, and top generously with shredded cheddar cheese. Bake at 350 for about 20 minutes until cheese is bubbly and potatoes have heated through (some of the meat mixture may sink through the potato "crust").FYI, I never measure anything, so the measurements on the ketchup and mustard are guesses. You also don't need to add them; I just do to make it my own and not just the "stock" manwich/sloppy joe taste. Same with the worcestershire and BBQ/steak sauce.

  • Yum, that sounds good!  Thanks Missy.  I never measure either, I hate when people ask me for recipes of things I've thrown together.  I'm like "well...I use about a handful of this...but I have smal hands so...."

  • It really is good. I made it last week, and used Sweet Baby Ray's BBQ sauce. I didn't like that sauce - too smoky for me - so I added dijon mustard (a lot) and a lot of ketchup to sweeten it up, and it was probably the best I'd ever made it.I really like it with the fresh carrots, but I'm too impatient to chop them carefully and evenly.And yes, recipes I've created or modified, I have to "about" the amounts. Then I usually add a "to taste" disclaimer...This casserole is very filling.  We grew up with shepherd's pie made with ground beef, cheese and potatoes (no veggies and no lamb), and our sloppy joe's were made with vegetarian vegetable soup, ketchup, mustard and worcestershire (my dad didn't like manwich).  So, I've kind of created my own version of the childhood stuff.PS:  Brie, if you want to make it, don't add the ketchup - it isn't necessary.... ;)

  • J&K, I swear by that thing.  It's absolutely the best kitchen gadget I own.  I'd be hard pressed to give up my kitchen aid mixer, but I'd fight harder to keep the pressure cooker.  I'm still coming up with new stuff to use it for & how to adjust recipes, but it rocks.  PS - sorry I was so late coming back to this post.  It was a wild afternoon at work.
