I serve with a salad and roasted brussel sprouts on the side.

I agree with PP's about the santa fe chicken. IT IS SO YUMMY, NOM NOM!!!! Normally I put it over brown rice. When I'm being REALLY healthy, I put it over lettuce shreds. I even had the thought to put it in taco shells! Again, NOM!

And rdr, I'm trying the chicken taco chili later this week (except I'm using ground turkey b/c I have some that's been frozen for months that I want to get rid of. I don't think it'll make that much of a diff). It looks really good! I'm excited to try it!.

I like the bangin shrimp recipe (clicky)

I'll also say that I didn't care for the Chicken Ropa Vieja recipe (clicky). It was okay, but nothing special. I will say that I had this only a couple of days after I first had the santa fe chicken, so my judgement might have been clouded!

Um, I'm making Broccoli and Cheese Stuffed Chicken tonight.

This is my first experience with skinny taste, and I can already tell I'm going to need to make modifications for GF, but it seems easy enough to do :)

Okay, so the cheese and brocolli stuffed chickens are in the oven.  They look delicious.  However, they were a bitch to put together.  Maybe it's just that I didn't have the best knife, but I couldn't get them to slice thin enough, so the filling kept falling out, and BLARGH.  I'm sure they'll be delicious though.  I'm starved.

I overcooked the pork chops a little (*ashamed*) but for my first time with pork, they were very good!  I also made a salad with ST's Autumn Salad with Pears dressing and put it over a salad of mixed greens with 1 cup pomegranate seeds, 1.5 oz pecans, and 1/4 cup feta cheese.  YUM!

the applesauce was good too.  :)  H was very happy with the meal, and so was I!  we'll both have good leftovers tomorrow!!

You had the exact opposite experience that I had with that pumpkin pie - we were a little sad over here, think we just needed more spice though.

don't overcook them!  do as she says (3.5 to 4 minutes on each side).  I was so paranoid I left them on a couple extra minutes each side, so they were slightly overcooked.  they are GREAT with the applesauce BTW.  and I also doubled up on the spices, I felt like mine needed more.  :)
