Mandapanda

Could you give me your recipe for the spinach quiche you made for the g2g? I posted this here instead of pm because everyone should experience the gloriousness known as this quiche :)

Re: Mandapanda

  • Did I make a spinach quiche? I thought it was broccoli. Actually, it doesn't matter, it's the same recipe! And I'm so glad you liked it!

I use store bought dough, my favorite is Harris Teeter brand (don't judge me!)
    6 eggs
2 cups of gruyere or emmenthal cheese, shredded
1 1/2 cups of milk (whole milk preferred. Skim will work, and anything heavier than whole will give you a very runny filling so I don't recommend)
2 teaspoons minced or crushed garlic (you can use more or less as you like)

Lay the crust in the bottom of the pan and make sure it comes up and over the edges of the pan. Spread the garlic over the crust.
Beat the eggs with the milk and then add in the shredded cheese. Stir it all to combine.
You can use whatever filling you like. Experiment! 1 cup of frozen broccoli or spinach are very good. Mushrooms and/or onions are also really good. If you're using frozen you want to drop it in hot water for about 30 seconds before adding it to the mix so it's broken apart and not stuck together.
Add your filling to the egg mix and make sure everything is stirred up to combine then pour it into the pie crust.
Bake at 450 for 35-45 minutes. You'll know it's done when you shake the pan and only the very center of the quiche is still loose. Also the cheese will be all golden and melty.
Let it sit for about 10 minutes before cutting into it. The first piece is always a pain in the butt to get out of the pan, but every piece after is much easier.

Let me know how it comes out!
